Only a few days left till Christmas and I’m so excited. It truly is my favorite time of year. I love to decorate the house, put up a Christmas tree, listen to Christmas music until I drive everyone around me crazy and watch Christmas movies. It couldn’t get any better than this.
I came across this recipe while surfing through pinterest and the thing that caught my eye is that it only requires 2 ingredients. Well this intrigued me, a cake with only 2 ingredients, you can’t beat that. Especially if you have a sweet tooth and you want something quick and easy, this is it.
Those 2 ingredients are a box of angel food cake and a can of crushed pineapple. You mix these 2 ingredients together and you have a delicious fat free cake which I served with cool whip and berry sauce. All I did for the berry sauce is take some mixed frozen berries, put them in a sauce pan and cook them for a couple minutes just until they thaw out. So there you have it, this is by bar the easiest recipe I’ve ever made and posted here. You will love this cake, it’s so light and delicious, you’ll have a hard time stopping at just one slice.
Ingredients:
- 1 box of Angel Food Cake
- 1 20 oz can of crushed pineapple
Instructions:
- Preheat oven to 350 F degrees. Spray a deep 9x13 inch pan or line it with parchment paper.
- In a large bowl, empty the contents of the box of angel food cake and to it add the crushed pineapple. Whisk it until it's well incorporated, you'll notice it start to foam a bit.
- Pour the batter in the baking pan and bake for 30 to 40 minutes. I baked mine closer to 40 minutes, at 30 minutes it was not yet done.
Notes
You will want to use a very deep baking pan here, or at least cut the parchment paper so that it comes up the sides of the pan, so that the cake batter doesn't spill as it bakes.

Quick and easy, and delicious! I used an ungreased Tube pan and cooled it inverted on a long neck glass bottle for about an hour. Light, fat-free, and delicious dessert.
Wow! You weren’t kidding about using a DEEP baking dish. You might want to reiterate in step3…I know you say it when you instruct to spray but being the in-a-hurry kind of baker, I missed it! Very light and fluffy with good flavor…great for a “quick” dessert.
