This cake is wonderful. Â My husband was in the mood for something sweet and I wasn’t sure what to make, I was thinking something chocolate, like brownies but I had no chocolate on hand so I decided to make this wonderful lemon and orange cake. Â It turned out gorgeous and absolutely delicious.
Ingredients:
- 3 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tbsp grated lemon zest
- 2 tbsp grated orange zest
- 3/4 cup milk
- 1 cup unsalted butter softened
- 1 1/4 cup white sugar
- 5 eggs
- 1 3/4 cups icing sugar
- 2 tbsp honey
- 1/2 cup butter at room temperature
- 2 tbsp lemon juice

Lemon Honey Icing
Instructions:
- Preheat oven to 350 degrees and butter and flour a round cake pan.
- In a medium bowl, sift together the flour, baking powder, baking soda and salt. Add the orange and lemon zest and mix well. Set aside.
- In the bowl of your electric mixer, use the paddle attachment and combine the butter and sugar together and mix for 2 to 3 minutes until light and fluffy.
- In a small bowl combine the lemon juice, orange juice and milk and stir well. Set aside.
- Add the eggs one at a time to the butter/sugar mixture and mix well Scrape the sides of the bowl as necessary. Begin adding the flour mixture a little bit at a time and alternating with the lemon/orange/milk mixture until finished. Mix batter well.
- Pour the batter into the greased pan and bake for 50 min to an hour until done. Check the center of the cake with a toothpick and if it comes out clean it’s done.
- To make the lemon honey icing mix all the ingredients together in the bowl of a mixer for about 5 minutes. The icing should be light and fluffy.
- Let cake cool on a wire rack and once cool you can either sprinkle with powdered sugar or spread the lemon honey icing.
