Last weekend we had a long weekend here in Canada, Monday was Civic day also called Heritage Day. I love long weekends. On Sunday my sister, her husband and my gorgeous little nephew came over. I can’t wait for that little guy to grow older so I can bake for him all kinds of cookies and other goodies.
They came over for dinner and I wanted to make a nice dessert for them. With strawberries being in season, I decided to make these cute little individual strawberry galettes. They turned out so cute, and need I mention delicious? They were exceptional. I didn’t serve these with ice cream, but I can imagine how much better they would have been with a nice scoop of vanilla ice cream. YUM!!
Needless to say, they were gone in no time. Well I made 6 and I packed the 2 left for my sister to take with her. I’m assuming they got eaten.
I used nice fresh strawberries for these galettes and I have to try these with different fruits too. I would love to try blueberry galette, or raspberry. Sounds yummy.
You’ll need about 3 cups of strawberries, washed and cut in slices. To make the cornmeal pastry, mix the cornmeal, flour, salt, sugar, cold butter and ice water together. You can do it all in a food processor, or just use two knives, forks or a pastry cutter and cut in the butter until the dough resembles course sand. If you need more water, add more cold water. Â Turn the dough onto a floured surface and shape it into a ball. Divide it in half and flatten out each half, wrap it in plastic wrap and refrigerate it for at least an hour.
When the dough has chilled. cut each half into 3 pieces, this recipe will make 6 smaller galettes. Roll each piece into a rough circle, that’s maybe about 6″ in diameter. As you are working with each piece, you might want to place the other pieces in the fridge, especially if it’s too warm in your kitchen. Slowly pick up the rolled out dough and place it on a piece of plastic wrap. Repeat this with remaining pieces, placing each piece on top of each other with a plastic wrap in between. Place them back in the fridge while you make the filling.
The filling is fairly simple to make, just add the lemon juice, sugar and cornstarch over the strawberries and mix well.
You can now preheat your oven to 375 F degrees. Take the dough out of the fridge and place a piece directly over the cookie sheet you’re going to bake them on because it will be difficult to move them otherwise. In the middle of the dough, please 1/6 of the strawberry filling. Be careful and do not overfill them. Slowly fold up the sides of the galette over the strawberries all the way around. Repeat this with the remaining galettes. Brush with egg wash.
Bake them for about 30 to 35 minutes or until nice and golden brown.
