Goat Cheese and Eggs in Bacon Baskets

Happy New Year!!! I can’t believe 2011 is over, time is really flying. I start a new role at my work  in the new year and I’m really excited. It will be something totally different for me, but I’m ready for a change.

I have the perfect breakfast for you to bring in the new year. This breakfast has unbelievable ingredients, eggs, bacon, salami, shiitake mushrooms, and goat cheese. It really will make your morning breakfast special.

We all know how bacon makes everything better. Well bacon is the perfect food for breakfast, in my opinion at least. This bacon that I used here is really great, the slices are much thicker which I really love, especially for this basket, because it’s stronger so it can nicely hold the egg and not fall apart.

I made 4 baskets, so I used these small ramekins. I did not butter the ramekins, but I added instead is a couple of slices of salami at the bottom of each ramekin, mostly for more flavor and to hold in the ingredients.

Next I sauteed some shiitake mushroom in a little bit of butter and added just a dash of salt and pepper. Do not add too much salt, because the goat cheese is pretty salty and so is the bacon. Divide the mushrooms evenly in each ramekin.

I used 2 slices of bacon in each ramekin, just to make sure the bacon went all around the egg. You can use only one slice, up to you, but the more bacon, the better. After you arrange the bacon slices around the inside of the ramekin, add about a tablespoon of goat cheese in each ramekin.

And last but not least, crack an egg inside each ramekin, and sprinkle a little bit of salt and pepper.

It already looks delicious and it’s not even cooked yet. Oh I also added a little bit of rosemary, but you can add any garnish you choose, chives would be ideal here. Bake these in a preheated oven at 350 F degrees for about 30 minutes.  They are so easy to make, and so worth the wait. Your significant other will love you for this breakfast.

Goat Cheese and Eggs in Bacon Baskets

Ingredients:

  • 4 eggs
  • 8 slices bacon
  • 4 tbsp goat cheese
  • 3/4 cup shiitake mushrooms, sliced
  • 1 tsp butter
  • 8 slices salami
  • salt and pepper to taste

Instructions:

  1. Preheat oven to 350 F degrees.
  2. In a small skillet saute the mushrooms in the butter for 2 minutes and season with salt and pepper.
  3. Add 2 slices of salami to the bottom of each ramekin.
  4. Arrange 2 slices of bacon around the inside of each ramekin.
  5. Divide the mushroom evenly among the ramekins and add a tbsp of goat cheese in each.
  6. Last but not least, crack an egg in each dish and season with salt and pepper.
  7. Bake for 25 to 30 minutes, or until eggs are done to your liking.
