Barbecued Pork Sandwiches

I’ve started weight watchers recently for the obvious reason, to lose a few pounds. Now it’s always hard at first because you never know what to eat. I want to prove that you can cook delicious meals while on weight watchers and still lose weight. I’m not trying to prove this to anyone else except myself.

To start this off, I thought I’d prepare these delicious barbecued pork sandwiches, and if you too are on weight watchers and are counting points, they come out to 9 points per sandwich. They turned out delicious, I mean who doesn’t love scrumptious pork sandwiches. They kind of remind me of pulled pork sandwiches.  This recipe I found on the weight watchers website, but as usual I like to change some ingredients around.

When I cook, I usually like to get all my vegetables and meats ready. First thing first, cut the pork loin into thin slices and chop the onion and garlic.

Next, heat a nonstick skillet over medium-high heat and add the pork slices to it.

You’ll notice that as the pork cooks, it will get very watery, but don’t worry, the water will evaporate as you continue cooking the pork.

Now the pork needs to cook for about 3 to 5 minutes, you just want to get a bit of color on it, then remove it from the skillet.

In the same skillet add the tablespoon of olive oil and add the onion and garlic and saute over medium heat until tender, about 5 minutes.

After the onion is cooked until tender, add the tomato sauce, Worcestershire sauce, vinegar, salt and pepper and stir well. Simmer this for a minute.

Add the pork to the sauce, cover it up and let it simmer for another 15 to 20 minutes.

After the pork has simmered you can assemble your sandwiches. You could use regular buns for this but I used these weight watchers multigrain flat rolls. They were just super delicious.

So for 9 points this was a delicious lunch.

Barbecued Pork Sandwiches

Ingredients:

  • 1 1/2 lb lean pork loin, sliced into thin strips
  • 1 medium onion, chopped

  • 1 1/2 tbsp Worcestershire sauce
  • 14 oz canned tomato sauce
  • 1 tbsp red wine vinegar
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 5 weight watchers multigrain flat rolls

Instructions:

    • Hi Anna,
      I grew up in a family where the number one meat was pork, mostly because it was the cheapest. We have many dishes with pork in it, now obviously you can use any meat you want, and I’d love to try this dish with chicken, and I’m sure it would be just as great. I hope yours turns out great.
