One of my favorite quick lunches is a good old bagel sandwich.  I live close to work, so sometimes I come home for lunch, and the easiest thing to make is a nice toasted bagel sandwich with lots of veggies.  It’s super quick, healthy and just super delicious.

Quick Bagel Sandwich

Yield: 1 serving

Ingredients:

  • 1 bagel (I love sesame seed bagel, or asiago cheese bagel)
  • 1 leaf of lettuce
  • 1 slice of swiss cheese
  • 2 slices of tomatoes
  • 3 slices of your favorite deli meat
  • 1 tbsp light cream cheese
  • 2 slices of onions (optional)

Instructions:

  1. This is really simple to assemble. I like my bagel toasted, so toast the bagel. On the bottom piece spread the cream cheese, add the ham or whatever deli meat you chose. Add the cheese, then tomatoes, onions, lettuce and the top bun.

Simple, and you’ve got yourself an awesome and healthy lunch.  If you’ve got leftovers, such as tomatoes or lettuce, put them in a plastic airtight container and use them next day for lunch.

This lunch idea is great, because you different kinds of sandwiches you can make is endless by using different ingredients all the time.  As I said this is my husband’s favorite food, a good old bagel sandwich.
