Here’s another wonderful lunch idea, a panini. Â Who doesn’t love a good panini, and you don’t need a panini grill to make one, you can just grill it in a skillet. Â Panini sandwiches are really just glorified grilled cheese sandwich, but packed with a lot more flavor and goodness. Really, you can put anything you like in these sandwiches, and most of the time I just put whatever I have in the fridge. Â I’ve made so many different kinds of paninis, they are quick, easy and simply delicious. Â This sandwich calls for roasted red pepper, I love roasted red peppers, they are a favorite of mine.
So like I said, if you don’t have a panini grill, it’s ok, just make it as you would a regular grilled cheese sandwich.
Ingredients:
- 2 slices of your favorite country style bread
- 2 tbsp of mayonnaise
- 1/2 roasted red pepper
- 3 thin slices of either chicken breast or turkey breast
- 1 slice of jack cheese
- 2 slices of red onion
- salt and freshly ground pepper to taste
- 1 tsp of olive oil
Instructions:
- Preheat the panini grill according to the manufacturer’s instructions.
- Brush one side of each bread slice with olive oil. Lay the slices, oiled side down, on a clean work surface. Spread the top of each slice with 1 Tbs. mayonnaise. Place the turkey or chicken on one slice and top with the roasted pepper, cheese and onion. Season with salt and pepper. Top with the other bread slice, oiled side up.
- Place the sandwich on the preheated panini grill and cook until the bread is golden and the cheese is melted, 3 to 5 minutes.
- Cut the panini in 2 and serve.
It’s so gooey and good.
