I just love sandwiches like this. I’ve had a jar of roasted red peppers in the fridge for a few days now and I’ve been trying to figure out what to do with it. This was a wonderful idea, these melts with roasted red peppers and caramelized onions with bacon and asiago cheese was to die for. Absolutely delicious, and what a wonderful lunch idea. It was super quick and very filling.
Preheat oven to 450 F degrees. Start by cleaning an onion, slicing it in half and then julienning the onion.

In a skillet, add a tbsp of butter and melt, then add the onion and cook it, until nice and caramelized, maybe about 3 to 5 minutes. Â In another skillet fry some bacon strips, you’ll need about 5 bacon strips. After they are fried, cut them in small pieces.

If you are watching your weight, you can skip the bacon and add some other of your favorite veggies. Add the bacon to a bowl. Â You’ll also need to chop up about a cup of roasted red peppers, and about 2 tbsp of chopped cilantro. I just added the cilantro for color more than anything else.

Add the caramelized onion to the bowl as well.

Mix everything well together.

Place 4 slices of bread on a baking tray, I happened to have some nice rye bread. Place 1/4 of the veggie mixture on each slice of bread, spreading it evenly over the entire slice.

You’ll need about a cup of asiago cheese, if you don’t have asiago you can use mozzarella cheese as well. Sprinkle 1/4 of the cheese onto each sandwich.

Now bake it, but be careful, they will be done quickly, in about 5 minutes.

Don’t they just look gorgeous, and can’t get any easier than that. Let me tell you, they were just as delicious. I hope you all try them.

- 1 onion, sliced julienne style
- 1 cup of chopped roasted red pepper
- 2 tbsp of chopped cilantro
- 5 bacon strips
- 1 tbsp butter
- 4 slices of rye bread
- 1 cup of asiago cheese
Instructions:
- Preheat oven to 450 F degrees.
- In a skillet, melt the butter and saute the onion, until it’s nicely caramelized.
- In another skillet fry the bacon and afterwards, chop it in small pieces.
- Add the cilantro, bacon, roasted red pepper, and onion to a bowl and mix all ingredients well.
- Place 4 slices of bread on a baking sheet and on each slice add 1/4 of the veggie mixture, spreading it evenly.
- Divide the cheese evenly over each slice.
- Bake for about 5 minutes, or until cheese has melted and starts to turn golden on top.
