What’s for dinner dinner tonight you ask?  Well I’ve got a treat for you.  How about a nice lemon and garlic pork tenderloin with a nice side of roasted potatoes.  I love roasted potatoes.  I usually make this garlic sauce that it’s just to die for and pour it over the potatoes and it’s divine.  Yes you will smell like garlic but if you want to know how to make it, it’s super simple.  Take about 6 garlic cloves, and use a mortar and pestle to grind them well, add a bit of salt, a bit of olive oil and about 1/4 cup of water, mix well and you’ve got yourself a nice garlic sauce and you can pour it over the potatoes and the pork.  Now this sauce is a traditional Romanian garlic sauce that we just put over any meat really.  Anyway here are the ingredients you’ll need for this dinner:
Ingredients:
- 5 cloves garlic, chopped
- zest of 1 lemon
- juice of 1 lemon
- 1/4 tsp cayenne pepper
- 2 tbsp chopped oregano leaves
- 1/2 cup olive oil for marinade
- 1 1/2 pounds pork tenderloin
- salt and pepper to taste
- 8 med potatoes peeled and cubed
- 1/4 cup olive oil for potatoes
Instructions:
- In a blender add the garlic, olive oil, oregano, cayenne pepper, salt and pepper, zest and lemon juice and blend until smooth. In a baking dish, put the pork loin and pour the marinade over the pork and turn it over to coat well. Cover it up with plastic wrap and set it in the refrigerator for at least an hour.
- Preheat oven to 375 F degrees.
- After an hour, peel the potatoes, and cube them, in a 9×13 inch dish, place the potatoes, add salt and pepper, the olive oil and some dried parsley if you wish and coat well. I usually cover them with aluminum foil for about an hour, then remove the aluminum foil and turn up the heat to 425 and bake them until they are nice and golden brown.
- At the same time as you’re baking to potatoes, I bake the pork tenderloin as well, same thing, I usually cover it up with aluminum foil for an hour then remove the aluminum foil and bake for another 30 minutes. Once it’s done, take it out of the oven and cover it up with aluminum foil and let it rest for 10 minutes or so, don’t cut it right away, if you do all the juices will come out of it. So serve these roasted potatoes with the pork tenderloin, it’s one delicious dinner that super simple to make and it will please all your family members.
