I’ve just gotten back from vacation this week and I’ve been very busy catching up with everything. So on such busy week nights you don’t have a lot of time for dinner, but I also don’t want to eat out. I’d rather make my own fresh food.
My husband happened to be in the mood for Mexican food, and this was great because with Mexican food you can pretty much just use staple ingredients you usually have around. One such ingredient that I always have is ground pork, there is always at least a package of ground pork or ground beef in my freezer. And you can make a lot of different dishes with ground meat.
I also had some tortillas which I had to use so burritos it is. Now I call these skinnified burritos because there’s no cheese in them, so that’s where a lot of the calories usually come from, but feel free to add cheese. They are quite delicious even without the cheese, I didn’t even feel I was missing it. You could probably make these even healthier if you used whole wheat tortillas.
