Whenever I mention quinoa to people, most people have no idea what I’m talking about and the ones that do, love it. Â Quinoa is like a grain and you can basically substitute for rice or noodles in your dishes. Â However, quinoa has lots of great health benefits such as it being rich in protein content, in fact, it’s a complete protein. Â Other benefits are its high content of manganese, good source of magnesium, riboflavin which reduces frequency of migraine headaches, low in saturated fat and cholesterol, and it’s a great source of calcium, among many more benefits.
If you’ve never had it, I suggest you try it, I personally really like it. Â This quinoa pilaf with chicken is an easy recipe and very healthy.
Ingredients:
- 2 tbsp of sesame oil (if you don’t have it, you can use olive oil)
- 1 celery stalk diced
- 1 onion chopped
- 3 med carrots diced
- 1 cup of quinoa
- 2 cups of chicken broth
- fresh sage or parsley
- 1 cup of cooked chicken breast cubed or shredded
- salt and pepper to taste
- 1 tbsp Italian seasoning
Instructions:
- In a saucepan heat the oil over medium heat.
- Add the onion, celery and carrots and cook until tender, about 5-8 minutes.
- Add the quinoa, chicken broth, Italian seasoning and sage or parsley. After you brought it to a boil on high heat, reduce the heat to medium-low, cover and let simmer for about 20 minutes.
- Add the chicken and season with salt and pepper.
Very easy to make and you’ve got yourself a nice and healthy meal.
