9 Delicious Summer Zucchini Recipes for all the summer squash, no need to be inventive, come check out these recipes!
By the end of the day Friday, my second week of being sick with Bronchitis, I had had enough. The lack of energy and feeling weak nonstop, and the never ending cough and congestion, cooking was the last thing on my mind.
But I am a food blogger, and I was determined to not disappoint my readers and knew that I had to do something. On Tuesday, I actually attempted to make it to work and lasted until lunch at which time I excused myself to my boss and went home. Once at home I made myself comfortable in my pyjamas and sat my butt down in my recliner in front of the TV. As usual I was watching the food network channel which always makes me hungry. So I knew I had to do something.
I cooked! I made a tuna noodle casserole, which I will post sometime next week and share with you the recipe. Needless to say that took everything out of me and even though it’s a very easy recipe to make, I was still sick. Have you ever tried to cook something when you’re sick? It’s not easy trying not to cough on the food and always making sure your hands are clean and wash your hands every time you blow your nose.
I am hoping that this Bronchitis is coming to an end especially since it’s been a few days since I finished my antibiotics and secondly I’m tired of being tired. And this brings me to now. Still tired and lacking energy, here I am in front of my laptop, blogging because it’s what I love to do.
But I decided to change things up a bit on you today. Today I’m sharing with you 9 delicious summer zucchini recipes that I have previously posted here on Jo Cooks. These recipes are easy to make and perfect for all the summer zucchini you buy and never know what to do with.
I’m eating the yellow/summer squash patties as I type. They are currently being complimented with sliced avocado and home grown tomato picked tonight. DELICIOUS. Thank you for posting this. Looking forward to trying the rest.
I don’t like egg plant, could I use courgette instead?
Can yellow/summer squash be substituted for any of these recipes?
Absolutely, for all of them I would think.
Thank you. Can’t wait to try them 🙂
