Easy Strawberry Spinach Salad
To me, this fresh strawberry spinach salad is the picture of health and it’s so easy to throw together! Spinach, strawberries, tomatoes and red peppers tossed in a simple, homemade, dijon based vinaigrette with hints of bright citrus. Healthy, colorful, flavorful and one of my all time favorite salads!

This gorgeous, colorful salad packs so much flavor, all while staying nutritious and healthy! Easy to make, using a short list of simple, fresh ingredients – this is the ideal light lunch or snack.
Ingredient Notes
Salad
- Spinach – Fresh, washed. Feel free to replace the spinach with any greens of your choosing!
- Tomatoes – I used cocktail tomatoes, cut in quarters. Feel free to use your preference. Cherry or grape tomatoes would be great in this salad.
- Red Bell Pepper – Cut in thin slices. I like red bell peppers the best, but you can use whichever you prefer!
- Strawberries – Cut in small pieces. Fresh strawberries are essential!
Dressing
- Dijon Mustard – Use your preference. The dijon paired with the sweetness of the honey and the zing of the vinegar is the best combination!
- Red Wine Vinegar – Substitute with your preference of vinegar.
- Citrus – Lemon and orange juice.
- Sugar – Substitute honey or agave.
- Olive Oil – Substitute sunflower, safflower or avocado oil
How To Make Strawberry Spinach Salad
- Mix Veggies: In a large bowl mix the spinach, strawberries, tomatoes and red pepper.
- Make Dressing: To make the dressing, whisk together the Dressing ingredients in a small bowl.
- Toss: Before serving pour the dressing over the salad and toss well.

Feel free to add or remove any ingredients or incorporate your own twist on this recipe! Some great options would be Bocconcini Cheese, Mixed Greens, Nuts (Walnuts/Pecans) Chicken Breast, Vegetables of your choosing, Sunflower or Pumpkin Seeds, Feta or Goat Cheese.

What can I use to replace Dijon mustard. We have an allergy in our family. What would be a good alternative in this dressing?
If it isn’t an allergy to mustard itself and just dijon, you can use Spicy Brown Mustard. Spicy Brown Mustard, Yellow Mustard, Honey Mustard, or Stone Ground. If it’s the mustard itself.. you can try Worcestershire Sauce, Horseradish Sauce, Wasabi or Mayonnaise. Depending on your preference! You can also make it your own and just leave out the mustard completely!
My husband said the salad was “delicious” and he has a very discerning palate. Used balsamic in dressing since I didn’t have red wine vinegar. Threw in some pumpkin seeds for crunch as well as pomegranate seeds. Very good!
