Steak and Salad Tacos – this easy to follow recipe for tacos is with grilled steak and a simple salad. Perfect summertime lunch or dinner.
Today was my first day back to work after one week vacation. I thought that after one long week, I go back to work and all my problems would be over. Not so. My work and problems are still there. Needless to say I came home exhausted and was not in the mood to cook any big dinners, so my husband and I decided on doing some grilling and making a nice salad to go with it. I took it one step further and turned the salad and steak into tacos. It was a super easy dinner to make and very filling and delicious. It’s easy when you split the tasks too, my husband is always in charge of the grilling and I’m always in charge of the salads. He says I make the best salads in the world. Who am I to argue with him?
For this easy salad I used half a loose leaf lettuce and cleaned the other half, wrapped paper towels around it, placed it in a ziplog bag and stored it in the fridge. This is a great way to store your lettuce for longer period of times and the next time you want to use it it’s all nice and washed and dry. Anyway, for the other half, I chopped it small.
Wash and clean a cup of radishes and slice them up. Add them to the bowl with lettuce.
Next, you’ll need about 8 cocktail tomatoes. Of course you can use any tomatoes you have at home. I just prefer these cocktail tomatoes, they are just delicious. Cut these tomatoes in quarters.
Add to the bowl about a cup of sliced green onions.
To make the dressing for this is super simple and I use this recipe anytime I just want a dressing that’s quick and tasty as well. You’ll need the juice of a lemon, 1/4 cup of olive oil and salt and pepper. Whisk it all together and you’ve got yourself a wonderful dressing. Pour the dressing over the salad and toss it all together.
Next comes the best part of the salad, the beef steak. By the time I’m done making the salad, my husband is always done with the steaks. Slice up the beef in thin slices.
Yum! To assemble the tacos, take a tortilla shell, I used medium sized ones, place lots of salad on it, then top it off with the wonderful grilled steak, and you’ve got yourself one crazy meal. Of course you may add some bbq sauce or some shredded cheese if you want for more flavor.
If you have salad left over, just eat it along with the tacos.
- 4 tortillas medium sized tortilla shells
- 2 8 oz beef steaks
- ½ head of loose leaf lettuce
- 1 cup of sliced radishes
- 1 cup of sliced green onions
- 8 cocktail tomatoes
- ¼ cup olive oil
- juice of one lemon
- salt and pepper to taste
- Grill the steaks. While the steaks are grilling, wash the lettuce and chop it up and place it in a bowl.
- Slice the radishes and green onions, cut the tomatoes in quarters and add them to the bowl.
- To make the dressing add the olive oil, juice of a lemon, salt and pepper and whisk.
- Pour the dressing over the salad and toss.
- Slice the beef in thin strips.
- To assemble the tacos, place lots of salad over the tortilla, and top it off with steak strips.
