I wasn’t feeling so well today, I woke up with a really sore throat, so I decided to make some homemade chicken noodle soup.  I had a whole chicken in the freezer and from it I made this chicken noodle soup, chicken and rice pilaf, and roasted potatoes with roasted chicken breast. So if you think about it, it’s very economical. Anyway, my chicken soup turned out just wonderful, and trust me there’s nothing better, especially when you’re sick. It just hits the spot.

Homemade Chicken Noodle Soup

Yield: 6 servings

Ingredients:

  • 1 chicken breast with skin and bones
  • 2 medium sized carrots
  • 1 medium onion
  • 2 cups noodles
  • salt and pepper to taste
  • fresh chopped parsley
  • 1 chicken bullion cube

Instructions:

  1. So you can use a whole chicken like I did and just boil the entire chicken, it makes for a really nice chicken soup, or if you just have chicken breast with skin and bones, just use that, but fill your pot with enough water so that the chicken is fully covered. Add the onion whole and add the cleaned carrots. Do not chop up the carrots, first I add them whole and then chop them out later.
  2. Boil the chicken until it’s fully cooked, about 30 minutes or so, as the water starts boiling, it will start foaming at the top of the pot, so usually I just remove that. My mother says if you don’t get rid of that foam, the soup won’t end up clear, but it will be dark.
  3. After the chicken has been cooked, take it out of the soup, remove the onion and carrots as well. Let them cool. At this point I usually add the chicken bullion cube, but most of the time I use vegeta which is a condiment made out of lots of vegetables, and it gives the chicken soup a really nice yellow color.
  4. Chop up the chicken breast and the carrots and add it back to the soup. At this point you may add the noodles, and salt and pepper. Cook the soup until the noodles are cooked. When done, add the chopped parsley.
