Grown Up Mac and Cheese

grown up mac and cheese-1-6

Sorry my friends. This may not seem fair to you that I post a mac and cheese recipe in the middle of the summer, while you're all in your swimsuits, but I promise you I tried to make this a bit healthier. I did, I really did try. I used whole wheat pasta, I used extra lean ground beef, skim milk and I added green peppers, see I added veggies to this otherwise not so healthy dish. So you see, I did try, I honestly did! And this is why I call this a grown up mac and cheese, because it is a bit … [Read more...]

Chipotle Popcorn Chicken

It's a crazy time here. We bought a house and we're moving in a couple weeks. There is so much to do with moving, it's such a tiring experience, but also a fun and exciting one. Needless to say with everything going on I have not had time to cook a lot, nor was I in the mood to cook. However we have to eat, so today I decided enough take out or eating out so I made popcorn chicken. But a while ago I discovered Chipotle Peppers in Adobo Sauce and ever since then I've been trying to create new … [Read more...]

Sweet Potato Turkey Meatballs

sweet potato turkey meatballs-1-4

As promised, here is another sweet potato recipe. Sweet potato turkey meatballs. Don't even ask how I came to make these meatballs. Ok I'll tell you. My husband wanted to eat some meatballs, but when I looked in the freezer the only meat I had was a package of ground turkey. In the fridge I still had a huge baked sweet potato, so I thought what's the worst that could happen, let's combine these two and see what happens. Well just like with any meatballs, I threw in some onion, some garlic, … [Read more...]

Baked Bang Bang Shrimp

The bang bang chicken recipe I posted a few months ago was so popular at my house and so delicious, I decided to try the bang bang shrimp but with a bit of a change. Many people have asked me if they can bake the chicken instead of frying it, so I decided to bake the shrimp and see how they turn out. I'm not going to deny that frying chicken or shrimp doesn't taste better because we all know that fried food tastes good, but I will tell you this. I used Panko breadcrumbs, with the same batter … [Read more...]

Healthy Turkey Meatballs with Marinara Sauce

Yep! Yet another meatball recipe! I'm sorry, I can't help it. I love my meatballs. But these meatballs are special. They are healthy turkey meatballs. At only 250 calories including the marinara sauce, it's a winner for those trying to lose a pound or two. How can you say no to that. Now I like to make things easy on myself and I buy the marinara sauce, because although I love to cook and bake, I don't like to be stuck in the kitchen all day. However, feel free to make your own marinara sauce … [Read more...]

Loaded Chicken Mac & Cheese

loaded chicken mac & cheese-1-2

I made this Mac & Cheese for dinner tonight. Even my picky husband ate it. Trust me that's saying a lot. He probably eats pasta 2 or 3 times a year. Every time I make it it's like I'm force feeding him vegetables. Isn't it weird that someone doesn't like pasta? But not tonight. Tonight I barely finished taking my pictures and he actually asked if he can start eating? I almost fell out of my chair, but I tried to act nonchalant, and said sure. He didn't complain at all while he was eating, … [Read more...]

Lemony Tilapia Fish Sticks

lemony tilapia fish sticks-1-2

Every once in a while I get in the mood for fish. Not often, I'm not a big fish eater, though I do like lobster and sushi and all that. But fish not so much. I do know that fish is good for you though, especially tilapia. It's such a lean fish, very high in protein and just good for you. It's not fishy at all, that's why I love this fish. There are so many ways to cook tilapia, but why not bake them and save yourself some calories. This is a very simple recipe and a perfect opportunity for me … [Read more...]

Bacon and Cream Cheese Stuffed Mushrooms

I'm a bit sad! My nice 4 day long weekend is coming to an end. And what a weekend it was, we got so much snow, it snowed for 2 days in a row. Now it's finally starting to warm just a bit and the snow is slowly melting. Though there is one family member that really enjoys this weather and that is my dog. Today's recipe is bacon and cream cheese stuffed mushrooms. I love my stuffed mushrooms and I make them every chance I get. But I do like to try different combinations every time I make them. … [Read more...]

Bang Bang Chicken

I finally found Panko breadcrumbs. Seriously, I've never used them before until now. And you know how they say ignorance is bliss, well that is so true. Because I did not know what I was missing, I knew they were supposed to be better but since I didn't know I was more than happy with regular old breadcrumbs. But Oh My God! Deep Fried Cauliflower Pieces

I know these aren't healthy for you but look at it this way, they're half healthy because it's cauliflower. And every once in a while you can indulge. I must tell you though, this is probably going to be the most tasty cauliflower you'll ever have. So yes, you shouldn't have this all the time, but something like this is perfect for a party like a Superbowl party, or just a get together with friends. Zucchini and Corn Fritters

It's the weekend! YAY! Weekends make me so happy. Not that I don't love my job, but weekends are personal. Weekends are for family, friends and good food. Thankfully the weather is still cooperating here in Calgary and we are still having beautiful weather full of sunshine and warmth. For today's recipe I'm featuring these zucchini and corn fritters which I really love. I love zucchini fritters of any kind, but I'm always looking for different ways to make them and to change them up a bit … [Read more...]

Parmesan Chicken Strips with Ranch Dressing

This recipe makes me very excited. It is one of my favorites. I love any type of chicken strips, but these Parmesan chicken strips are the bomb! I'm serious. I have a hard time stopping myself from eating them all. They are to die for. They are extra crispy, and the ranch dressing, oh you cannot skip it. Like Guy Fieri says, they are ridonculous! You know why these strips are extra crispy? Because you dip them in eggs, then flour, eggs again then the Parmesan breadcrumb mixture, so double … [Read more...]
