Cheddar Cheese Buttermilk Biscuits

buttermilk biscuits-1-3

It's been a very busy and stressful week at work and when I get worked up like this, my favorite thing to do is to bake. Baking really relaxes me. What better thing to bake than these delicious cheddar cheese buttermilk biscuits. These biscuits are so tender, flaky, cheesy and they smell heavenly. I had them with my eggplant salad, but you can have them with a cup of coffee so they are perfect for breakfast, or they would be great with some jam or even just plain. I really urge you to try these, … [Read more...]

Baked Bang Bang Shrimp

bang-bang-shrimp-1-3

The bang bang chicken recipe I posted a few months ago was so popular at my house and so delicious, I decided to try the bang bang shrimp but with a bit of a change. Many people have asked me if they can bake the chicken instead of frying it, so I decided to bake the shrimp and see how they turn out. I'm not going to deny that frying chicken or shrimp doesn't taste better because we all know that fried food tastes good, but I will tell you this. I used Panko breadcrumbs, with the same batter … [Read more...]

Coffee Cake Bread

coffee cake bread-1-2

I made this coffee cake bread late last night and I dreamt about it all night. It was late last night when I made it so I didn't try it. Hence the dreaming part. You don't understand. I love my Sunday morning breakfasts. Not a Sunday goes by that I don't make something nice for breakfast. And this coffee cake bread is the perfect complement to a good cup of coffee. To make it even more special I drizzled some caramel sauce over it, but feel free to skip it, it's entirely optional. Coffee … [Read more...]

German Chocolate Cake

german chocolate cake-1-2

One of my favorite cakes is German chocolate cake. I don't make it often, this is probably the second time I've made it, but it is amazing, however I will eat it whenever I get a chance. My favorite part about it is the coconut and pecan topping, obviously. Coconut and pecans together make a fabulous combination. The chocolate cake itself is the same recipe I always use for chocolate cake because I think it's the best. It's a moist cake that's made with buttermilk and it's just unbelievably … [Read more...]

I finally found Panko breadcrumbs. Seriously, I've never used them before until now. And you know how they say ignorance is bliss, well that is so true. Because I did not know what I was missing, I knew they were supposed to be better but since I didn't know I was more than happy with regular old breadcrumbs. But Oh My God! I love love love Panko breadcrumbs. The chicken came out so crispy, so crunchy, so heavenly! Seriously! I am never going back to regular breadcrumbs again. You know … [Read more...]

Cabbage Bacon Salad with Buttermilk Vinaigrette

cabbage and bacon salad-1

In my last posted recipe I've established that bacon is a vegetable. :) So having said that today's recipe also classifies as a vegetarian dish. It's a cabbage salad with a super delicious buttermilk vinaigrette that just has some bacon in it. Without bacon, it just wouldn't be the same. Bacon makes the world go round. I put bacon on my bacon! OMG ... BACON! Got bacon? Keep calm and eat bacon. Bacon is meat candy. MMM ... BACON! Peace, love, bacon! Press button, … [Read more...]

Blueberry and Chocolate Chip Scones

blueberry chocolate chip scones-1

Scones are the perfect weekend breakfast and it's probably one of the easiest things you can bake. By definition a scone is a quick bread, no yeast required, no rising, you just pretty much mix all the ingredients together. Scones are also very versatile. They can be made savory or sweet. I like them both ways but I do prefer a sweet scone. This is a simple recipe that uses fresh blueberries and chocolate chips. I made them for a meeting at work and everyone loved them. This is why I doubled … [Read more...]

Chocolate Cake with Mixed Berry and Cream Cheese Filling

chocolate cake with fruit filling and cream cheese filling-11

I've probably impressed you by now with my baking skills, if not please let me believe I have. Ignorance is bliss after all. :) But if I haven't, I will impress you with this cake. So it's not one of those gloriously decorated cakes that took hours to put together, but for me taste always comes first and this cake definitely has that. This cake was so good it should be banned, notice I said was, as in the past tense, because it did not last long! What was the occasion, you ask. Who needs an … [Read more...]

Jo’s Buttermilk Fried Chicken

fried chicken

Fried chicken is one of my favorite things to eat. I love fried chicken served with a side of mashed potatoes, a great salad, or simply just plain!  Unfortunately I don't make fried chicken often, well because it's not the healthiest thing to eat, but it's great every once in a while, like when you have friends over. Fried chicken is one of those first things you learn to make because it's so simple. I think fried chicken is really in anyone's culture, so you could say I learned it at home. … [Read more...]
