Mexican BLT with Guacamole

mexican-blt-1-2

I think I have a split personality when it comes to food. The reason I say this is because sometimes you see recipes like this Mexican BLT with Guacamole or this Thai Chicken Salad on my blog which are fairly healthy and then sometimes you see recipes like Sex in a Pan or this chocolate cake here. Not that there's anything wrong with that, I just wanted you to know that I know. Have I confused you yet? Well here's the thing my friends, you need variety in your life, so here you will find lots … [Read more...]

Breakfast Turkey Stacks

breakfast-turkey-stacks-1-6

Yesterday I ate some sardines, something I hardly ever eat, but my husband had opened a can of sardines so I tried some. They were not too bad, but as soon as I ate them, my face swelled up and turned red. Luckily we had benedryl in the house so I took some. Today it's better but still not completely back to normal. What the heck, I didn't even know you could have an allergy to sardines and I know I had sardines before and nothing happened. I blame this on getting old, all kinds of weird things … [Read more...]

Skinnified Pork and Bean Burrito

pork and bean burritos-1

I've just gotten back from vacation this week and I've been very busy catching up with everything. So on such busy week nights you don't have a lot of time for dinner, but I also don't want to eat out. I'd rather make my own fresh food. My husband happened to be in the mood for Mexican food, and this was great because with Mexican food you can pretty much just use staple ingredients you usually have around. One such ingredient that I always have is ground pork, there is always at least a … [Read more...]

Bourbon Dijon Tenderloin

bourbon dijon tenderloin-1-2

I'm developing a passion for cooking with bourbon. My husband hates it when I cook with alcohol for whatever twisted reason, but then when he eats the food, he can't stop mumbling how good it is. So I don't listen to him when he complains because I know later on he'll be thanking me in his own way. I got this idea from a show I watched with Paula Deen in which she made a sort of bourbon rub she brushed on pork chops she was grilling. So I thought about it and realized what a great idea. I've … [Read more...]

Avocado BLT

Let's face it! Is there a better sandwich out there than a BLT? OK, maybe there is, but for those of you who have never had a BLT, it stands for bacon, lettuce and tomato. 3 simple ingredients that when paired together in a sandwich make for an incredible marriage. There could be many variations of the BLT, as I chose to do so here, I made an avocado BLT, but the main ingredients for a BLT sandwich are bacon, lettuce, tomato, mayonnaise and bread. Normally, iceberg lettuce is used because it … [Read more...]

Turkey Tacos

turkey tacos

Yesterday, for no reason at all except maybe to make my dog happy, I roasted a big old turkey. Yep, on a very hot day I decided to have my oven on for a few hours. Silly of me I know, but yes, my dog was very happy, and she'll be very happy for the rest of the week. I do have a lot of turkey left over though. Remember, it's just my husband and I, and my dog, so there's only so much turkey one can eat. I don't want it to go to waste either, so sometimes I have to be creative and come up with … [Read more...]

Steak and Salad Tacos

Today was my first day back to work after one week vacation. I thought that after one long week, I go back to work and all my problems would be over. Not so. My work and problems are still there. Needless to say I came home exhausted and was not in the mood to cook any big dinners, so my husband and I decided on doing some grilling and making a nice salad to go with it. I took it one step further and turned the salad and steak into tacos. It was a super easy dinner to make and very filling and … [Read more...]

Canada Day Steak Salad

Happy Canada Day my fellow Canadians! What better way to celebrate this wonderful day, than with a nice and delicious steak salad. It was a gorgeous day for a little barbecue and we decided to take advantage of it. Of course my dear beagle is always the first in line for a little barbecue. But don't worry, we always make plenty for her. This was a super simple salad, with a few basic ingredients, but it was superb. It made an excellent dinner and was truly enjoyed by my family. You'll need a … [Read more...]

How about something healthy for a change? This salad is awesome and it's very very filling. You can have this as a main meal for lunch or dinner.
