Easy Beef Lasagna

Oh hi there! I so glad you came to join me in my culinary adventures because I have a super easy recipe to share with you. If you're like me, you're probably scared to make lasagna because of all the work it takes, boil the noodles, make the sauce, assemble the lasagna and bake it. This recipe is a lot simpler and it makes for a fabulous weeknight dinner. So let me start by saying that I'm not a lasagna virgin. I've been making lasagna for a long time now and every single time, although I love … [Read more...]

Gnocchi with Bacon, Tomato Sauce and Mozzarella

Happy Weekend! All I want to do right now is go to bed, get under the covers and watch a chick flick. Yes I call them chick flicks, but I love them, I even make my husband watch them with me sometimes and I think he even enjoys them. He's getting soft in his old age. But it's been a hectic week and I'm tired and all I feel like doing right now is stay in bed and watch TV. Pretty exciting, eh? I still had to cook something, so here comes gnocchi with bacon, tomato sauce and mozzarella cheese, … [Read more...]

Sausage, Spinach and Bocconcini Frittata

sausage spinach and bocconcini frittata-1

Frittata! Frittata! I just love saying frittata! Isn't it a fun word? Frittata! OK, I'll stop. But this frittata is insanely delicious. It has some of my favorite ingredients, sausage and bocconcini. Yes there's spinach in here too, but really that's not one of my favorite things to eat, but seriously in this frittata you won't even taste it, and you get your greens. Seriously! In case you're wondering, I used mild Italian sausages here, yum! Now my friends, if you have not had bocconcini … [Read more...]

Fries Supreme

fries supreme-1-2

Don't hate me because I'm beautiful. Remember that 1980's Pantene commercial? That's what I think of when I see these fries! Seriously. Look at them. They are gorgeous. But unlike that Pantene commercial this did happen over night, actually it happened in about an hour. Why do I remember these stupid things, that commercial is forever imprinted in my brain. But anyway, look at these fries? Do they make you hungry? Do they make you crave them? I thought so. I hate to admit it but … [Read more...]

Loaded Chicken Mac & Cheese

loaded chicken mac & cheese-1-2

I made this Mac & Cheese for dinner tonight. Even my picky husband ate it. Trust me that's saying a lot. He probably eats pasta 2 or 3 times a year. Every time I make it it's like I'm force feeding him vegetables. Isn't it weird that someone doesn't like pasta? But not tonight. Tonight I barely finished taking my pictures and he actually asked if he can start eating? I almost fell out of my chair, but I tried to act nonchalant, and said sure. He didn't complain at all while he was eating, … [Read more...]

Lasagna Roll Ups

lasagna rollups-1-7

I've just made lasagna roll ups for the first time and I have to tell you this is the easiest way you can make lasagna. Not only do they look incredibly adorable, but they are also very delicious. I'm sure everyone has their favorite lasagna recipe, but this is my easy recipe that I use whenever I am in the mood for lasagna. So whether you make it as a regular lasagna, or lasagna roll ups, this recipe is very easy to make, mostly because the ingredients are not fancy and are ingredients … [Read more...]

Rigatoni in Blush Sauce with Chicken and Bacon

I love long weekends, I especially love the fact that I have more time to do the things I enjoy doing and don't have to rush and get everything done. As much as I love long weekends, I hate when they are over. Yesterday was Labor day and I know everyone makes burgers and hot dogs for these long weekends, but I was in the mood for pasta, plus I can have leftovers to take to work for lunch. I for one love pasta dishes, my husband not so much, so that's why there are always left overs. But you … [Read more...]

Mini Caprese Salad Bites

Caprese Salad or Insalata Caprese is a very simple salad from Italy consisting of fresh mozzarella cheese, tomatoes, basil and olive oil and seasoned with salt and pepper. I think the beauty of this salad is its simplicity and the fact that it consists of the Italian flag colors. Different versions of it include using balsamic vinegar and that's what I chose to do with mine today. I love this salad, and we make it almost every night of the week because of how simple it is. We use fresh … [Read more...]

Stuffed Portobello Mushrooms

stuffed portobello mushrooms-1

May is Vegetarian and Seafood Month at JoCooks. As I mentioned in my previous post, I am doing this to prove to myself that you can cook a variety of dishes with no meat. Today's recipe is one that I am a big fan of. I love mushrooms, and I love stuffed mushrooms. Portobello mushrooms are great for stuffing because they are so big and you can really stuff them with anything. These mushrooms were so delicious, they were gone instantly. I barely had time to take some pictures of them. … [Read more...]

Fluffy Mozzarella Biscuits

fluffy biscuits-1

I've finally made the perfect biscuit. I don't know what was in my head to make a mozzarella biscuit. Well I'll tell you what. Personally I like mozzarella cheese over cheddar cheese, and that's the only cheese I had. Usually I make these biscuits with buttermilk, but I didn't have any, so I used regular milk. I wasn't sure how these puppies were going to turn out, but I was going for a big and fluffy biscuit. And that's what I got! Look at the size of this biscuit. And boy was it good. To … [Read more...]

Marinated Pork Sandwich with Rosemary Aioli, Mozzarella Cheese and Roasted Red Peppers

So it's April, it's almost Easter, it is officially spring. Not in Calgary. It is snowing heavy out there as I am typing this post and I am not happy about it. It looks like December out there, but thankfully I am off for the rest of the week and I don't have to go out there. Even Mia (my beagle) would not want to step out there. She'd rather stay inside and watch TV. With me. :) I've probably mentioned this before, but I love to watch the foodnetwork channel. I'm watching it as we speak. … [Read more...]

Eggs and Bacon Bowls

Eggs-and- Bacon-Bowls-1-2

I love weekends because I finally have time to make a decent breakfast and enjoy it with my husband. I love these egg bowls, they are quite different than my usual oatmeal breakfast. This breakfast is easy and delicious, not to mention impressive. It's the perfect breakfast, perfect for a weekend brunch and you could even have this for lunch. You could actually fill these up with any toppings you like. I filled mine with bacon of course, bocconcini cheese, eggs, and cherry tomatoes. If you've … [Read more...]
