This gnocchi with mushroom ragu is a super easy dinner that's ready in under 30 minutes and perfect for any night of the week. Remember I told you I work in IT (Information Technology)? I've been a systems analyst/software developer all my life, for almost 20 years. Stop guessing my age! Would you believe it if I told you that in all that time I never used a Mac computer? Kind of hard to believe. I've always been a Windows gal. There really is something to be said about teaching old dogs new … [Read more...]

Zucchini Lasagna

I am so excited about this recipe. Before today if you would have told me to try zucchini lasagna I might have given you a dirty look or laughed in your face. But my friend Fenne and I have decided to eat less carbs so we've been trying to come up with recipes that we love but with less carbs. So we decided on zucchini lasagna. Not only is this beautiful recipe low carb but it is also low fat. So this gorgeous lasagna is what we came up with. It has zucchini in place of noodles, a delicious … [Read more...]

Calzone Pinwheels

calzone pinwheels-1-3

Let's face it! I made no secret before of how much I love pizza. In any shape, old fashioned pizza, stromboli, calzones, and now in the pinwheel form. It's sad I know, but you can't blame a girl for liking her pizza. And these cute little bites are so easy to make and so adorable that you can't resist eating them. I love making appetizers, and if you give me an appetizer that's like a little mini pizza, well I'll love you forever. You know what's great about these puppies? They are made with … [Read more...]

Mexican Style Omelette with Chorizo, Mushrooms and Tomatoes

mexican style omelette with chorizo, mushrooms and tomatoes-1-3

It's been a rough week here in Calgary. As many of you have probably seen, we've had Alberta's biggest flood in history. Over 100,000 people were evacuated from their homes. The damage is tremendous.  Things are slowly getting back to normal here but there are still people who have not been able to return to their homes yet. Never in a million years would I have thought there would be such a flood here in Calgary. We were among the lucky ones who have not been affected by the flood, both in our … [Read more...]

Mushroom and Sausage Mini Breakfast Quiches

mini breakfast quiches-1-2

Did I ever tell you breakfast if my favorite meal of the day? I probably did! But let me tell you again. I love breakfast and I can hardly wait for the weekends to make a nice breakfast. So that's what I did today. These mini breakfast quiches are as delicious as they are adorable and not to mention super easy to make. I've had this can of Pillsbury biscuits in the fridge for a couple weeks and have been wondering what to use it for. And then I had this brilliant idea to make these mini … [Read more...]

Deli Pizza

Pizza! One of my favorite foods to eat of all time. I am salivating just writing about it. We made this for the first time a couple weeks ago and we loved it so much we had to make it again. And again! The funny thing was, it was a saturday night and we hadn't gone grocery shopping yet. We were hungry and nothing to eat. So our goto food is always pizza, we've been making pizza ever since we learned how to make pizza dough and we never looked back since. Anyhow, we didn't have too many … [Read more...]

Mushroom Filled Pork Tenderloin

Let's talk husbands for a minute. I know most women probably complain about their husbands because they don't do enough or whatever. But I'd like to actually do the opposite here. Ladies, don't hate me but let me start by telling you how much I appreciate my husband. I don't want to sound cheesy but I actually think my husband completes me. I could not imagine life without him. He does so much for me, I can't even begin to tell you. But it's not the big things he does, it's all the little … [Read more...]

Cheesy Chicken Pasta Bake

It's been such a stressful week for us as we've been searching for houses and coming up empty. It seems to be a seller's market and if anything good comes on it's gone in a couple days. So how do I deal with stress, well probably like a lot of people, with food, and what's more comforting than a delicious plate of pasta. But wait! Not just any plate of pasta, but a cheesy chicken pasta. And you know what's so great about these dishes, you don't really need a recipe. Like any good chef will … [Read more...]

Paprikash Chicken Stroganoff

I'm pretty much fed up with winter and ready for spring or summer. I would love to live somewhere tropical, where there's no snow, the temperature never goes below 0 degrees. Somewhere where you can step out of the house and everything is green and there's no need for a jacket or a coat. Somewhere where I could sit out on the deck and feel the sun beat down on my skin for more than a couple months out of the year. Somewhere where I could go out for a leisurely walk without wearing snow boots and … [Read more...]

Crepes (Clatite)

Well this is my favorite dessert ever, probably because as a child I ate this a lot. I've been making these for as long as I can remember.  They are easy to make, and the best part is that you can fill them with anything you like.  My favorite filling is nutella, or just any plain old jam, raspberry, strawberry, blueberry, apricot, whatever you have in your fridge.  I'm making them now because my husband bought this great blueberry Saskatoon jam, and it would be a waste not to make some crepes … [Read more...]

Chicken Enchilada Stuffed Zucchini

Ah zucchini! Who doesn't love zucchini? I know what you're thinking, there's lots of you out there who don't love zucchini, but why not? Have you ever had stuffed zucchini? They are perfect for stuffing, but there are many other ways to serve zucchini. When I was a kid, my mom used to slice up the zucchini into thin, about 1/2 inch, slices. She would then put them through egg wash, then some flour and fry them. Do you know how good they are? One of these days I'm going to try to bake them like … [Read more...]
