Baked Parmesan Tomatoes

This week has been the longest week ever. But I say that every single week. I love Fridays, hate Mondays and everything in between, blah blah blah blah blah! That's the bad news. The good news is I have a new favorite appetizer. And that's these tomatoes here! Seriously, it's my new favorite way to eat tomatoes. These baked Parmesan tomatoes are the bomb!! Strong emphasis on the word baked, hence good for you. It's almost magical when you pair together tomatoes and Parmesan cheese. I don't … [Read more...]

Classic Greek Salad

That's one delicious salad there! Greek salad is by far my favorite salad ever. This salad was extra special though. This salad was made with love by my dear husband. The only pleasure I take from being sick is having my husband cater to me. But it's true, I love it, my husband makes me teas, and lunch and dinner and it just feels wonderful. But all kidding aside this is one great salad. This is our recipe for Greek salad that we make over and over again. The only thing we change with it is … [Read more...]

Roasted Garlic Hummus

roasted garlic hummus-1

Have you ever had hummus before? Hummus is Middle Eastern dip made from cooked chickpeas, olive oil, tahini and lemon juice. My version here is slightly different. You must love garlic for this hummus. I love roasted garlic and I always loved roasted garlic hummus, so I roasted 3 whole  garlic heads, which is very easy to do if you've never roasted garlic before. You first cut the top of the cloves off and place them in aluminum foil with the cut part on top, drizzle with some olive oil and … [Read more...]

Parmesan Garlic Roasted Potatoes-1-4

I can't deny that one of my favorite sides are roasted potatoes. I've made roasted potatoes so many different ways,  I just like different spices and flavors, so I'll try and put just about everything on potatoes. To me, roasted potatoes are such a comfort food. So I've made roasted potatoes with garlic sauce before or I've made Parmesan roasted potatoes but I've never combined the two flavors together. Until now! Every summer, I can't wait for the time when I see fresh figs at the grocery store or at the farmer's market. This past weekend I was lucky enough and found them. I found these beautiful green figs and I just knew I had to buy a box. These figs are absolutely delicious, they're so sweet and amazing, they melt in your mouth. I just knew I had to make a tart with them. This tart has all my favorite ingredients. Fresh figs with pecans, goat cheese and a drizzle of honey. It is unbelievable. It's … [Read more...]

Lamb Souvlaki

lamb souvlaki-1-4

This recipe is for the true meat lover. Or not! Let me start by saying that I don't really like lamb. Seriously! Until I made this lamb souvlaki! I. Love. This. Lamb. What's so special about this lamb, you ask? It's simple. I marinated this lamb in this totally greek marinade for 24 hours. I love greek flavors, so my marinade was simple, olive oil, lots of fresh lemon juice, salt, pepper, oregano, garlic, onion and a little bit of Emeril's Essence. Well after 24 hours, the meat was infused … [Read more...]

Oyster Sauce Chicken

chicken in oyster sauce-1-6

Finally my kitchen is beginning to make some sense and we're slowly unpacking all the boxes. This makes me happy. I know where things are now, I can cook! So I cooked. Mind you I started with an easy recipe such as this oyster sauce chicken with peppers and snow peas, but today I will bake. Today, I will make that kitchen mine! I had a vision. A vision of a nice chicken stir fry kind of dish. We were both getting tired eating out and take out over the past week, so this was such a welcomed … [Read more...]

Fattoush Salad with Chicken

A few years ago, I used to work at a bank in Troy, MI and there used to be a Lebanese restaurant, not sure if it's still around, but it was called La Shish. That's where I had my first Fattoush Salad. It was amazing, delicious, probably the best salad I ever had in my life. Well since then we moved to Calgary, and I haven't been to a Lebanese restaurant since. Not sure how or what happened, but I got a craving for one of those beautiful and scrumptious Fattoush Salads. I remember at the … [Read more...]

Cauliflower Poppers II

cauliflower poppers II

What? What's with the cauliflower poppers II? Well I have another version here, but I love my cauliflower so much I had to try it with different spices. It is past the middle of March and it won't stop snowing. I crave warm weather. I want to not see snow anymore! It's days like this that I wish I lived on a secluded island... OK, I … [Read more...]

Garlic Cheese Bread

garlic cheese bread-1-2

Our first snow of the year, today. It does not make me happy. Mind you it's not a lot and it's not sticking, but the fact of the matter is, it's snow. I know you're probably thinking what do you expect in Calgary, but the thing is, it's been such a beautiful summer here, and the fall has been beautiful as well, I just don't want it all to end. Enough of my weather rant, let's get on with today's recipe which is very simple, it's one of my favorite appetizers to order at a restaurant, the … [Read more...]

Italian Parmesan Roasted Potatoes

I love roasted potatoes and they really are my favorite side dish. Not only do I have them as a side dish but I eat them just on their own, as they are very filling. Since I like them so much I make roasted potatoes quite often, and I always look for new ways to make them. My favorite recipe is still my roasted potatoes with garlic sauce but this recipe comes in at a close second. If anything I can probably pour that garlic sauce over these Parmesan potatoes and I combine the best of both. Why … [Read more...]

The Ultimate Brussels Sprouts Salad

brussel sprout salad-1

Ah, brussels sprouts. How many people can actually say the love brussels sprouts? Well I'm not one of them. But I'm stubborn that way. When there's a vegetable that I don't like I try and make something with it, until I like it. And that's what I did with brussels sprouts. Of course the addition of bacon to this salad immediately makes it out of this world, but there are a couple more things in here that I absolutely love. I added white cheddar cheese and pecans of course. I have to admit … [Read more...]
