Do you all feel like summer is over now? Kids are back to school, trees are turning yellow, nights are cooler. Last night we left the window wide open in the bedroom and before long we had to wake up and close it because I love summers too much and I hate to see them end, but it's inevitable, summers will end. Anyway, it's not over just yet so I'm going to enjoy every minute of it. I made these breakfast taquitos a few weeks ago, and my husband and I just loved them. So I wanted to try a … [Read more...]

Roasted Eggplant and Pepper Spread (Zacusca)

I am so excited to share this recipe with you. I grew up eating this vegetable spread and it's one of my favorite snacks. I'm in love with these taquitos. They're so good, I can't stop eating them. I could have them any time of the day! Seriously. A taquito literally means small taco. I even love the name, taquito. It sounds so cool. Taquitos are a Mexican food dish consisting of a small rolled up tortilla with some sort of filling such as beef, chicken and cheese. Finally my kitchen is beginning to make some sense and we're slowly unpacking all the boxes. This makes me happy. I know where things are now, I can cook! So I cooked. Beef Soup (Ciorba de vacuta)

Today I'm going to share with you my husband's favorite beef soup recipe.  This is a very Romanian soup and very traditional.  It's very easy to make, just time consuming because you need to boil the beef for 2 or 3 hours until tender. You could speed up the process by boiling the beef in a pressure cooker for 20 minutes, just make sure you save all the beef broth and add that to your soup. [easyrecipe id="47" n="0"] Enjoy! … [Read more...]

If you're looking for a quick and delicious dinner idea, then this chicken fajitas braid is for you. This braid could not get any easier to make and it's so fabulous your entire family will love. Of course this braid could be made with homemade dough, but since we want this to be easy and quick I used Pillsbury crescent rolls to roll out the dough into a rectangle and form the braid.
