Paprikash Chicken Stroganoff

I'm pretty much fed up with winter and ready for spring or summer. I would love to live somewhere tropical, where there's no snow, the temperature never goes below 0 degrees. Somewhere where you can step out of the house and everything is green and there's no need for a jacket or a coat. Somewhere where I could sit out on the deck and feel the sun beat down on my skin for more than a couple months out of the year. Somewhere where I could go out for a leisurely walk without wearing snow boots and … [Read more...]

Pork and Balsamic Onion Quesadilla

Pork and Balsamic Onion Quesadilla-1-2

Let's start the new year with a great healthy recipe. I made this with leftover roast pork I had from New Year's Eve, but you could use chicken, turkey, whatever leftover meat you have or you could even use deli meat. The great thing about this recipe is how you could switch ingredients around, use whole wheat tortillas, or Gouda cheese instead. As I was eating this quesadilla I realized that it would taste great with a fresh squeeze of lime juice. I was right. You have to try it, it's … [Read more...]

I'm sure everyone has their favorite lasagna recipe, but this is my easy recipe that I use whenever I am in the mood for lasagna. So whether you make it as a regular lasagna, or lasagna roll ups, this recipe is very easy to make, mostly because the ingredients are not fancy and are ingredients … [Read more...]

Beef Empanadas

beef empanadas-1-2

Winter is in full force here in Calgary, it's been snowing pretty much every day this week and if you look outside you'd think it was December not October. But that's OK, maybe this means winter will end early. Who am I kidding? My dog seems to enjoy it though, she loves running in the back yard in all the snow. So on such cold weekends, what better to eat than a nice warm meat pie. These beef empanadas couldn't get any easier to make because I used puff pastry. Usually when I've made meat … [Read more...]

Chicken Burritos

It's the weekend and the weather is pretty depressing. It rained and it looks like it's going to rain some more. But I don't mind too much, because this weather is perfect for staying indoors and cooking. And that's what I'm doing. Take a look at these chicken burritos. Do they look good or what? They are really good, and very easy to make. And you know what else? They're perfect for breakfast, lunch or dinner. We just had them for breakfast and they did not dissapoint. Great way to start the … [Read more...]

Sweet Potato Hash with Eggs

sweet potato hash-1-2

My husband bought these 2 huge sweet potatoes, and I made some some sweet potato fries with 1/2 of 1, that's how big they are. So I still had 1/2 of a big sweet potato that I kept in the fridge and thought it would be great for a sweet potato hash over the weekend. So glad I made this. This was one of those breakfasts that I love, so hearty and delicious, it's a wonderful way to start your weekend with. I've said this before but truly this is one of my favorite things about weekends, the big … [Read more...]

Coconut Shrimp Curry

My friends, I have a special dish for you today and I promise you will love this coconut shrimp curry. If you like curry dishes, you will want to make this. In Romanian cuisine we don't use coconut milk or many of these ingredients found in this dish and this is why I like to experiment and try different type of dishes. When I started this blog my husband asked me if I won't run out of recipes. I laughed and said there's no way I will ever run out of recipes. Yes, I'll run out of the recipes … [Read more...]

Turkey Breast Stuffed with Bacon and Cheese

turkey breast stuffed with bacon-1-3

September in Calgary. It's already starting to cool down, very cold nights, and cool mornings. I must be really sensitive because I've already got a sore throat. But this last weekend it was a long weekend, Labor day weekend and the weather was still nice during the day. The great thing about Calgary though, is the sunshine. It's always sunny here, which is why we love it here. On Sunday I did a bit of cooking because I was in the mood and my favorite Sunday dinners are usually roasted … [Read more...]

American Macaroni Salad with Bacon

You all know my dear beagle that I love with all my heart. Here's a picture of her in case you don't know what she looks like. As you can see she's getting up there in age, she's 8 years old right now. A senior dog you might say. For the most part, she is the best dog in the world. I mean look at that innocent face. You look at that face and you think that dog could do no wrong. But that dog, that darling beagle always has one thing on her mind. Her tummy. So to make a long story … [Read more...]

Salmon with Roasted Tomatoes and Onions

It's Stampede week here in Calgary and if you don't know what that is, you should and if you can, come down and visit. The Calgary Stampede is the annual rodeo, exhibition and festival which is held in July and it's probably one of the biggest rodeos on earth. Hundreds of thousands of tourists come here every year to see this great Stampede. And this year the Stampede does not disappoint. In fact, it celebrates its 100th anniversary so it's bigger and better than ever. One of the favorites at … [Read more...]

Knockout Chicken Salad Sandwiches

chicken salad with grapes and pecans-1-3

Chicken salad sandwich is truly one of my favorite lunches. It's something that's super quick to put together and delicious at the same time. This particular chicken salad however is to die for. It's crunchy because it has chopped pecans and it's a bit sweet because it has grapes. I think adding these two ingredients to a traditional chicken salad, totally turns this salad into a star. It's perfect for when you're in a rush and need to pack a lunch, it's also perfect for dinner when you … [Read more...]

Loaded Potato Skins

I had a mojito¬†today. I was so hot I needed a cold mojito to chill me off. I don't think it worked. In fact it did the opposite. One thing I miss from living in Southern Ontario is a cold air conditioned house. People here in Calgary don't normally have air conditioners because you normally don't need one, you probably need it for a couple weeks all summer. But it doesn't help when I have the oven on. It turns my kitchen into a sauna. But it was worth it to make these unbelievable … [Read more...]
