Individual Easy Chicken Pot Pies

chicken pot pie-9

On a cold winter day, there is nothing better than a nice hot chicken pot pie. And cold it has been here in Calgary, -30 or lower. Thankfully a Chinook is coming and today it has warmed up a bit. The only thing I don't like about Chinooks is the headache that comes with it. In any case, a good chicken pot pie is perfect for this kind of weather. This recipe is very easy, the best part about it, is the crust, which really is just a buttermilk biscuit, but I thought it would be … [Read more...]

Buttermilk Biscuits

buttermilk biscuits-9

Biscuits are one of my favorite things to bake often. This recipe for biscuits is super simple to make and with only a few ingredients you can have fresh buttermilk biscuits in only a few minutes. If you don't have buttermilk, use a measuring cup and to it add 1/2 tablespoon of lemon juice or vinegar and to it add milk to make 1/2 a cup. Stir it then let it sit for 5 minutes. This recipe will only make 7 biscuits but they have very little butter in them and so are only 3 weight watchers … [Read more...]

Shanghai Chicken

Today I learned a new term used in the cooking world. As you guys may know, if you've read my profile page, I'm not a chef or I have not been trained as one. Everything I do, I learned on my own, or any of my traditional Romanian recipes, I've learned from my mother. However, I love the food network channel, and that is pretty much all I ever watch on TV. So last night I was watching a show which I think it's called America's worst cook, and one of the chefs on there was teaching the competitors … [Read more...]

Turkey Bites

turkey bites

I love turkey breast and it's a very healthy and lean meat. I like to buy the boneless skinless turkey breast and use it instead of chicken, I think its flavor is much better. Now these turkey bites are to die for. They are so flavorful and just simply delicious. My husband and I (and the dog) could barely hold back long enough to take pictures. To make them really tasty I used lean turkey breast which I cooked in butter, yes butter, everything tastes better cooked in butter. Then I added hot … [Read more...]

Chicken Fricassee

chicken fricasse-2

I've had this classic Frenchbook for years now, and I've always been afraid to try any of the recipes in there. I've always thought of French food as difficult or time consuming, but very delicious. Well this past weekend I decided to look through the book and see if there was any dish in there that wouldn't scare me off. So this is how I came across this old fashioned chicken fricassee recipe, and the thing that I liked about it is that it used chicken wings and thighs, so I thought it would … [Read more...]

Pork Loin and Pea Stew

pork and pea stew-11

This pea stew is a traditional Romanian dish and it truly is one of my favorites. I grew up eating this dish and the great thing about it is that it's very versatile, you can make it with chicken, pork, beef or lamb and it's easy to make. The other great thing about this dish is that it's fairly healthy and the way I made it here it's only 9 weight watchers points for a great big serving. The secret I must share with you is that when I first moved out on my own, this pea stew is one of the … [Read more...]

Cauliflower Poppers

It's a crazy week this week. I'm conducting training this week, something which I don't normally enjoy, being the introvert that I am, however I have to say this week I am enjoying it a bit. Something different than my normal day to day work activities. The part that I'm enjoying is chatting with people all day long, versus being in my office all day long programming. The part I don't enjoy so much is that whenever I train I get really tired and I feel that when I come home I'm like a zombie. So … [Read more...]

If you've never made popovers before, you're in for a treat. Popovers are very light and hollow and are made from egg and milk batter. They are so delicious, and honestly when you bite into one, you'll be surprised how light they are. They are called popovers because when you bake them they pop over the top, it's so much fun to watch them in the oven as they rise. According to Wikipedia, popovers are the American version of Yorkshire pudding, which if you know, they look exactly the same. I love … [Read more...]
