Ingredients

  • 2 to 3 pounds chicken drumsticks around 10 drumsticks
  • 8 cloves garlic
  • 1 inch piece of ginger root
  • ½ cup parsley
  • ¼ cup soy sauce
  • ¼ cup olive oil
  • salt and pepper to taste

Instructions

  • Add all ingredients (drumsticks excluded) to a blender and pulse a few times until garlic and ginger are a paste and the mixture emulsifies. Place the drumsticks in a large ziploc bag and pour the marinade over the chicken. Close the bag and place in fridge; let it marinade for about 20 or 30 minutes. Could be marinated overnight.
  • Preheat oven to 375°F.
  • Place the chicken and all of the marinade in a 9x13 inch baking pan. Bake for about 45 minutes or until chicken is cooked through and browned on the outside.

Notes

  1. Line the baking pan: To make cleanup easier, line your baking pan with parchment paper or aluminum foil before placing the drumsticks and marinade in it. This will prevent the marinade from sticking to the pan and make washing up a breeze.
  2. Check for doneness: Use a meat thermometer to accurately check if the chicken drumsticks are fully cooked. The internal temperature should reach 165°F (74°C) to ensure they're safe to eat.
  3. Rest the chicken: Let the cooked drumsticks rest for a few minutes before serving. This allows the juices to redistribute within the meat, resulting in a more tender and juicy dish.
