Preheat oven to 350℉.
Cook the tortellini according to package instructions. Usually they're done in about 10 to 12 minutes. Remove tortellini from boiling water and set aside.
Cook the ground beef in a skillet until it's no longer pink. If there's any fat, make sure you drain the fat.
Add the tortellini to a oven safe casserole dish, a 9x13 inch should be a good size, add beef, enchilada sauce, 1 cup of the mozzarella cheese and toss. Sprinkle the remaining mozzarella cheese over the top and bake for about 20 to 30 minutes or until cheese has melted and is bubbly.
Garnish with parsley if preferred and serve warm.
