Strawberry Spinach Salad

Ingredients

Salad

  • 8 ounce fresh spinach washed and drained
  • 1 cup strawberries cut in small pieces
  • 5 cocktail tomatoes cut in quarters
  • 1 red bell pepper cut in thin slices

Dressing

  • 1 ½ teaspoon Dijon mustard
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1 tablespoon orange juice
  • 1 teaspoon sugar
  • 3 tablespoon olive oil

Instructions

  • Mix Veggies: In a large bowl mix the spinach, strawberries, tomatoes and red pepper.
  • Make Dressing: To make the dressing, whisk together the Dressing ingredients in a small bowl.
  • Toss: Before serving pour the dressing over the salad and toss well.

Notes

  1. You can use a salad spinner for better results.
  2. Using fresh, quality ingredients for your salad is best!
  3. If you plan on having any leftovers, leave the dressing on the side for everyone to toss with their individual servings. This way your salad won't get soggy!
  4. Your salad can last anywhere between 1-5 days, depending on if you have already dressed the salad or not! Undressed salad will keep for a few days longer (typically 3-5 days) than if the salad already has the dressing incorporated.
