Salad
- 8 ounce fresh spinach washed and drained
- 1 cup strawberries cut in small pieces
- 5 cocktail tomatoes cut in quarters
- 1 red bell pepper cut in thin slices
Dressing
- 1 ½ teaspoon Dijon mustard
- ½ teaspoon salt
- 1 teaspoon pepper
- 2 tablespoon red wine vinegar
- 1 teaspoon lemon juice
- 1 tablespoon orange juice
- 1 teaspoon sugar
- 3 tablespoon olive oil
Mix Veggies: In a large bowl mix the spinach, strawberries, tomatoes and red pepper.
Make Dressing: To make the dressing, whisk together the Dressing ingredients in a small bowl.
Toss: Before serving pour the dressing over the salad and toss well.
