Taco Meatball Ring

This Taco Meatball Ring is perfect for parties, fun to make and easy to assemble. The jumbo size meatballs are stuffed with Monterey Jack cheese and they’re incredibly delicious.

Tacos…or meatballs? Is this the eternal question for anyone else? Okay maybe just me, but regardless of where you fall on this issue I’ve come to save the day by combining the two of them.

Taco Meets Meatball

Meatballs are such a versatile little treat, I mean if you don’t believe me just check out some of the different things I’ve done with them in my kitchen! Meatball ingredients are simple with the main ingredient being ground meat. Any ground meat, turkey, chicken, beef, pork, lamb, whatever ground meat you like, and feel free to mix them together, like I did in these taco meatballs

You will need crescent rolls to make the ring, it doesn’t have to be perfect because it’s not about perfection, it’s about good food. Pizza dough would work too so feel free to have some fun with this recipe!

Ingredients

Meatballs

  • Meat – I used ground pork and beef today for a nice flavorful and moist combo.
  • Egg – The binder for our meatballs, if you’d prefer to go egg free you can substitute 1/4 cup of ricotta cheese per egg.
  • Breadcrumbs – I used store bought panko breadcrumbs today. It’ll absorb tons of flavor and is the best option if you’re not using fresh crumbs.
  • Herbs – Fresh parsley all chopped up. Dried will work as well, just keep in mind that one teaspoon of dried herbs equals one tablespoon of fresh.
  • Spices – We’re going to use Tex Mex seasoning and taco seasoning today to deliver tons of flavor as easily as possible.
  • Sauce – We want some heat to our meatballs today so I used sriracha but feel free to use your favorite hot sauce or skip if you don’t want the heat.
  • Seasoning – Salt and pepper today.
  • Vegetable oil – We want a nice neutral tasting oil, so something like canola would work very well.
  • Cheese – I used Monterey Jack for some heat and to create a melty molten interior for our little meatballs.

Ring

  • Crescent rolls – For our taco ring to create a perfectly pull-able handheld little treat. Feel free to use pizza dough if you’d like – it’s up to you!
  • Egg – For the egg wash for our ring. I’ll include more information below regarding egg wash.

Toppings

  • Veggies – Lettuce, cherry tomatoes, onion, and jalapeno pepper.
  • Olives – Black olives all sliced up, feel free to omit if you’d like.
  • Cheese – Shredded cheddar cheese sprinkled liberally on top.
  • Sauces – Sour cream and salsa to dip it in.

How To Make Meatball Taco Ring

Meatballs

  1. Combine the meatballs: In a large bowl mix together all the meatball ingredients until well combined, excluding the Monterey Jack cheese and the vegetable oil.
  2. Form the meatballs: Form the meatballs into about 1 1/2 inch balls sticking a piece of the Monterey Jack cheese in each meatballs. You should have enough meat mixture for 16 good size meatballs.
  3. Fry the meatballs: Heat the vegetable oil in a large skillet. Add the meatballs to the skillet, they should all fit in one batch, and fry until golden brown all around, should take about 7 minutes.

Taco ring

  1. Preheat your oven: Preheat your oven to 350 F degrees. Line a large baking sheet or a large baking pizza pan with parchment paper.
  2. Form the ring: Arrange the crescent rolls, forming a ring with the pointed ends facing the outer edges. To make this easier, put a small bowl in the center, and arrange the crescent rolls with the wide ends overlapping around the bowl.
  3. Assemble the taco ring: Place a meatball in each roll and fold the crescent pointed ends over the meatball and pinch together with the wider end of the crescent. Repeat with all the meatballs.
  4. Bake the ring: Brush the egg white over the crescent dough. Bake for 20 minutes or until golden brown.
  5. Finish the dish: Transfer the ring to a serving platter or a large cutting board. Fill the ring with the shredded lettuce, tomatoes, green onions, cheese, olives, jalapeno peppers. Serve with sour cream and salsa.

This dish is perfect for game day or any special occasion that draws in a crowd!

Leftovers

You can store this dish in the fridge for up to 3 days sealed in an airtight container. If you’d like to freeze it it will work better frozen before being placed in the oven. Allow it to thaw in the fridge over night before finishing the rest of the recipe.

This Taco Meatball Ring is perfect for parties, fun to make and easy to assemble. The jumbo size meatballs are stuffed with Monterey Jack cheese and they're incredibly delicious. 

Ingredients

For Meatballs

  • 3/4 lb ground pork
  • 3/4 lb ground beef
  • 1 egg
  • 1 tbsp Sriracha or any type of hot sauce
  • 1 tbsp tex mex seasoning
  • 1 tbsp taco seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper or to taste
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup fresh parsley chopped
  • 4 oz Monterey Jack cheese cut into 1/2 inch cubes
  • 2 tbsp vegetable oil for frying meatballs

For Ring

  • 2 tubes refrigerated crescent rolls 8 oz tubes
  • 1 egg white beaten

Optional Toppings

  • 1/2 head small iceberg lettuce shredded
  • 1 cup cherry tomatoes quartered
  • 4 green onions chopped
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup black olives sliced
  • 1 jalapeno pepper sliced
  • sour cream and salsa

Instructions

Recipe Notes

  1. You should get 16 large meatballs from this, but if you have any meat leftover, fry them and serve separately.
  2. Use any kind of ground meat that you prefer, as long as it adds up to 1.5 lbs.
  3. If you want, try this recipe for homemade crescent roll dough instead of using store bought tubes.
  4. Please keep in mind that nutritional information is a rough estimate and can vary greatly based on products used.

      You can usually buy Taco seasoning in your local grocery store, many times you can find it in packets in the Mexican isle with all the tortillas and salsas. Usually it has chili powder, garlic powder, onion powder, red pepper flakes, paprika, cumin, salt and pepper.

        Is tex mex seasoning same with taco seasoning? I did see taco seasoning but never tex mex seasoning.

        It’s a bit different, but taco seasoning would be a great substitute if you can’t find Tex Mex.
