Roasted Purple Yams with Avocado Aioli – these colorful yams are roasted to perfection with a bit of olive oil and Parmesan cheese, then served with a smooth and creamy avocado aioli.

Any day that I get to do my hair at the salon is a good day, so I really can’t complain about anything today. A good hair day is a pretty good day in my book. Nothing feels better than covering all my gray *cough*, getting a head massage and a great cut. And while I love my cut, I just can’t understand why I can never get the cut I show my stylist in a picture. It’s happened to me over and over again. But now enough about my hair and let’s talk about these yams.

When I saw these purple yams at the store I had to buy some, purple is one of my favorite colors, so yeah I just bought them solely on their color. But hey we can do that when we have a food blog. I can buy food just cause it’s pretty. But yams are good for you anyway, great source of energy and fiber and when paired with this avocado aioli, well you know it’s going to be good. This is such a simple recipe too and that aioli is to die for. You could also spice the aioli up a bit by adding some hot sauce, I know some people that love love spicy food, so adding some spice to this would be a great idea.

Have you ever had avocado aioli? It’s so smooth and creamy and just delicious. It just goes perfectly with these yams, but of course you can use sweet potatoes, or even just regular fries. I also sprinkled some grated Parmesan cheese over my yams because I can’t just not, I need Parmesan on my fries. Parmesan cheese is my favorite cheese, so that should explain it. I put it on everything.

So there you have it. I personally love to have these as a snack, but they would make a great appetizer or a side dish.

Roasted Purple Yams with Avocado Aioli - these colorful yams are roasted to perfection with a bit of olive oil and Parmesan cheese, then served with a smooth and creamy avocado aioli.

Ingredients

  • 3 medium-sized purple yams or sweet potatoes, about a lb
  • 2 tbsp olive oil
  • 3 tbsp Parmesan cheese grated
  • salt and pepper to taste

For Avocado Aioli

  • 1 avocado
  • 1/2 cup Greek yogurt
  • 1/4 cup basil chopped
  • 3 cloves garlic
  • juice from 1 lime
  • salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat the oven to 425 F degrees.
  • Cut the purple yams into long thin strips then place them in a large bowl, drizzle with olive oil, add Parmesan cheese, salt, pepper and toss well.
  • Spread out the purple yams over a baking sheet. Try to have a single layer of fries so that each fry bakes evenly.
  • Place in the oven and roast for about 25 to 30 minutes, turning them over after 15 minutes, until they're crispy and start to brown.
  • While the purple yams are baking, you can prepare the avocado aioli. Place all the avocado aioli in a food processor or blender and blend until smooth.
  • Serve purple yams with avocado aioli.

    The aioli recipe is amazing, especially if you’re a garlic lover! I didn’t have greek yogurt on hand and ended up using cottage cheese instead and it worked out great.

    These look SO delicious and are so unique! I’m so glad I have your website to look through when I have some free time at work. It’s probably a bad idea to look through when I’m starving, though!!!

    Curious, what camera/lens do you use for your shots? do you have a special work space set up that you use in your kitchen or home office?

      Hi Staci,
      I’m using a Canon 6D with a 100mm f/2.8 macro lens. I don’t really have a special space set up, I just take pictures in my kitchen on my island, with light from 2 windows.

    I had hear about purple yam in an episode of masterchef and i had no idea what it was. The avocado aioli is also a new thing to me. I love when I discover such new and exciting stuff; now I wont be out of ideas when I get my hands on a purple yam! 🙂 Thanks a bunch for sharing!
