Asian Style Udon Noodles with Pork and Mushrooms – a super quick and incredibly easy udon noodles dish with pork, mushrooms and a spicy sauce. Dinner in 20 minutes tops!
The fact that today is super hot outside today and the sun is burning like crazy, it has not stopped me from getting out my brand new wok from its box and making a hot and spicy udon noodle dish. After all there are hungry mouths to feed that don’t care about the weather. I’m even tempted to bake something because I have the itch, and there’s nothing I can do about that itch except bake!
I went ahead and decided to go with the udon noodles first because they’re so quick to make, honestly once I had all the ingredients ready I was done in 10 minutes. 10 minutes and then the noodles were gone in 3 minutes. Now you see them, now you don’t. All I was left was with dirty dishes which was basically the only proof I had that I actually made this. Oh and these pictures, which just looking at the noodles again is making me drool and lick my monitor. But I’m adult, for crying out loud, so I can control myself. One would think.
I’m actually kind of embarrassed to tell you about the sauce because basically what I did was look in my cupboard and my fridge and pulled out everything I saw that screamed Asian to me. I should have called this everything but the kitchen sink udon noodles. I even used the fresh cooked udon noodles I find in my local grocery store, which I love love love because I don’t have to wait to cook my noodles, you just have to put them in some hot water for a couple minutes and they’re ready to dump in your wok. Which is why I love dishes like this so much. Even when I’m tired and stressed I can still put something like this together in a matter of minutes and it will beat any take out you can think of. Because it’s homemade and nothing beats homemade!
If you come here a lot you’ll know that I love my simple dishes, and that I like to take shortcuts whenever possible, probably because I’m lazy or that I’d rather be doing something else. There are times when I do take my time with certain recipes, recipes that need long term love and care and I save those experiences for weekends when time is in abundance, but most of the time, I live for these types of dishes. So if you’re like me, I’m sure you’ll appreciate these noodles.

- 8 oz udon noodles fresh
- 1 tbsp olive oil
- 1 medium shallot chopped
- 4 cloves garlic minced
- 2 pork chops cut into thin strips
- 1 cup mushrooms I used cremini, chopped
- 5 green onions chopped
- 2 tbsp sesame seeds
- 1/4 cup peanuts optional, chopped
- Blanch udon noodles in boiling water for about 1 to 2 minutes or if using noodles cook according to package instructions. Drain well and immediately rinse with cold water. Set aside.
- In a small bowl whisk all the sauce ingredients together.
- Heat the olive oil in a wok or large skillet over high heat. Add shallot, garlic, mushrooms and pork to hot wok and cook until pork starts to crisp up and browns.
- Add noodles and sauce and stir it all together and cook for 2 minutes. Remove from heat and garnish sesame seeds, green onions and peanuts.
- Serve while hot.
