Delicious Kung Pao turkey, with peppers and pistachios, a slight twist to the original Kung Pao chicken.
Have you ever had one of those days when everyone gets on your nerves at work and it seems like anything that can go wrong does? Well today was one of those days for me, very busy day at work, full of meetings and lots of things going wrong, hardly had any time for a coffee break. Everybody seems to want the world from you, especially in software development, well you can do anything with software and my reply back to them is yes, we can do anything, given enough time and money. Not the answer they want to hear, but sometimes the truth needs to be heard.
Needless to say when I got home from work, I was extremely tired and not in the mood for cooking. So I was contemplating between having a pizza or making this Kung Pao Turkey that I’ve had my heart set on. Now you may think this is hard to make, but really if you have all the ingredients, it’s not too bad.
I would like to warn you now though, this is quite spicy, at least it was for me. So if you can’t handle spicy food, cut down on the chili garlic sauce or the hot and spicy ketchup. Obviously this dish is normally kung pao chicken, but I wanted to make it with turkey, because I had a beautiful piece of turkey breast.
I cut the turkey breast up in small pieces and add the turkey to the marinade and let the turkey marinade for about 20 minutes.
Now you should have plenty of time to get the vegetables ready and the sauce ready. The sauce is fairly simple to make, just mix all the ingredients together and voila.
For this dish, you will need one bell pepper, it can be red, green or yellow, I happened to have a yellow one, so you’ll need one large bell pepper or two smaller ones, one cucumber that needs to be deseeded and diced, about 4 green onions chopped and garlic, of course.
Getting everything ready like this before actually cooking this dish is what makes this dish simple to make. It’s all about being organized.
You’ll need a wok for this, but if you don’t have one that’s just as fine, any regular skillet would work just fine. In a wok, you’ll need to heat up the oil and add the garlic to it, but make sure you don’t burn it, you just need to saute it for 30 seconds, then add the turkey and cook for a few minutes until the turkey is cooked fully through and gets a bit of color. Just add the veggies except the green onions and cook for a few more minutes, add the sauce and cook until the sauce thickens. Before turning off the heat, add the green onions and pistachios and mix everything well. I chose to use pistachios because I love them, they’re a bit saltier and just delicious, but you can use peanuts, normally peanuts are used.
- 1 1/2 lb 600 g turkey breast, cut in small cubes
- 1/2 cup pistachios
- 5 cloves of garlic minced
- 1 large yellow bell pepper chopped
- 1 English cucumber deseeded and chopped
- 5 green onions chopped
- 3 tbsp olive oil
- salt and pepper to taste
- Mix all the ingredients for the marinade together and add the chopped turkey to it, and let it marinade for about 20 minutes.
- In the meantime, mix all the sauce ingredients together and set aside.
- Get all the veggies chopped and set aside.
- Heat a wok and add the 3 tbsp of olive oil to it. Add the garlic and cook for 30 seconds, being careful not to burn the garlic. Add the marinated turkey to the wok and cook for about 10 minutes, until the turkey is cooked through.
- Add the vegetables, minus the green onions to the wok and cook for 3 minutes, then add the sauce and continue cooking until the sauce thickens and everything is coated.
- Add the green onions and pistachios, mix well and remove from heat.
