Easy Salad and BBQ Chicken – sometimes simple is much better. Delicious BBQ chicken with a simple and healthy salad. It’s what’s for dinner!
So here we are on a weekday and you come home from a long day at work and you need to make dinner. Well this salad and chicken could not get any easier. This is not necessarily a recipe, it’s just more of a dinner idea. A dinner that is good for you, and it’s quick and easy to make. Sometimes we don’t want to slave in the kitchen for hours to come up with an extravagant dinner, sometimes we just want to get it done quickly and feed those empty stomachs.
This salad is very simple, and very versatile, you can really throw in any vegetables you have in your fridge. The way I like it is with butter lettuce. Butter lettuce is my favorite lettuce because it’s so smooth and buttery.
Normally I just use a whole head of butter lettuce, but if I add other things like tomatoes and cucumbers, I clean half of it and put the other half in the fridge. The way I store it, is I wrap it in paper towels so it soaks up the water and place it in a ziploc bag. It will keep this way for a few days and it will stay nice and fresh. Next thing I used is a red bell pepper cut up in thin slices.
I love cucumbers, so I will always add cucumbers to my salad, cut those up in small pieces.
And lastly the one thing I always add to my salad is tomatoes. I love these smaller cocktail tomatoes, there is just so much flavor in them.
The dressing again is very simple, I just whisk together equal amount of oil and equal amount of lemon juice, and add salt and pepper.
Finally as usual the hubby is in charge of the grilling so today he grilled these wonderful drumsticks and they were just delicious. Every time we grill, the dog just parks herself beside the grill and will not move from there until you feed her. So here is my wonderful easy, and fulfilling dinner, a great salad with barbecued chicken.
Sometimes simple is just better.
- 1 head of butter lettuce
- 1/2 english cucumber
- 1 red bell pepper
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt and pepper to taste
- 4 drumsticks
Heat up your grill and grill the chicken.
Chop up the lettuce, cucumber and pepper.
Make the dressing by whisking the olive oil, lemon juice and salt and pepper together.
Before the drumsticks are done, pour the dressing over the salad and toss.
