Beans and Sausage (Fasole cu Carnati)

Easy Beans and Sausage – a hearty, delicious and satisfying meal.

This is a very common dish in Romania, pork and beans or sausage and beans. I made mine here with smoked sausage, one popular version is using smoked meat, which is really good and has amazing flavor from the smoked meat. You can use any smoked sausages that you like, but I prefer kielbasa.

Another choice you have is with the beans. You can use canned beans or dry beans. But if you’re in a hurry and have to put dinner on the table in an hour, I suggest using canned beans, it tastes just as great. However, if you use dry beans, I recommend soaking the beans in water overnight. I think the reason for this is because it makes the beans a bit more tender and they cook much faster.  If you use dry beans you’ll also need to cook them for a couple hours beforehand. Which ever method you choose, you have to rinse the beans well.

You can also add bacon to these beans for additional smoky flavor, but I decided to skip bacon this time.

The reason I like this dish so much is that it’s so delicious and we love to eat it with marinated red bell peppers or onions. It’s such a hearty meal and very satisfying. It’s an easy meal to prepare and it makes for great leftovers.

Beans and Sausage (Fasole cu Carnati)

Ingredients

  • 2 540 ml 19 fl oz cans mix bean blend
  • 2 cups of sliced smoked sausage ie. kielbasa
  • 1 red pepper chopped
  • 1/4 cup fresh chopped parsley
  • 1/4 cup fresh chopped dill
  • 1 680 ml 23 fl oz can tomato sauce
  • 2 tablespoon of vegetable oil
  • 1 large onion chopped
  • 6 cloves of garlic minced
  • 1 tablespoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoon Frank’s hot sauce
  • 2 cups water
  • salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil and add the sliced sausage and fry for a couple minutes.
  • Add onion and garlic and cook for another 3 to 5 minutes until the onion is translucent.
  • Add red pepper and continue cooking for a couple more minutes.
  • Rinse the beans and add them to the pot along with the tomato sauce and water. Add the spices, and hot sauce and stir. Bring to a boil, reduce heat, cover and cook for 20 to 30 minutes.
  • A couple minutes before removing the pot off the heat, add the chopped dill and parsley.
