Cabbage Bacon Salad with Buttermilk Vinaigrette – got bacon?

In my last posted recipe I’ve established that bacon is a vegetable. 🙂
So having said that today’s recipe also classifies as a vegetarian dish. It’s a cabbage salad with a super delicious buttermilk vinaigrette that just has some bacon in it. Without bacon, it just wouldn’t be the same.
Bacon makes the world go round.

I think you got it. So don’t question me why I put bacon in a lot of recipes. There’s your answer. 🙂
Bacon can make even this cabbage salad into a star. I mean if I had just made cabbage salad with buttermilk vinaigrette, would you have tried it? Cabbage Salad? Sounds boring, right?
But when I say cabbage bacon salad with buttermilk vinaigrette, well now you’re all excited, your ears perked up and you want to read more and see how bacon makes this salad into a star.
Now that we all have an understanding about bacon we can talk about this recipe and about cabbage. Personally, not a big fan of cabbage here, there are a couple recipes I love with cabbage and those are Braised Cabbage with Bacon and my Cabbage Rolls, which if you pay close attention here, they both have bacon. But I came across this salad in my search for vegetarian recipes and the bacon jumped out at me and I just happened to have some cabbage in the fridge, so I figured why not. Cabbage bacon salad it is.
I modified the original vinaigrette recipe a little bit and instead of dry mustard I used dijon mustard and wow, it made this salad alive. It was delicious. What can I say, between the bacon and the great vinaigrette, I forgot I was eating cabbage. Because we all need to be eating cabbage every once in awhile, even though we may not like it, but it’s full of wonderful nutrients and it’s got lots of health benefits. The health benefits of cabbage include treatment of constipation, stomach ulcers, headache, excess weight, skin disorders, eczema, jaundice, scurvy, rheumatism, arthritis, gout, eye disorders, heart diseases, ageing, and Alzheimer’s disease.
So now we don’t just say got bacon? We say got cabbage and bacon?

Cabbage Bacon Salad with Buttermilk Vinaigrette
Ingredients
- 1 pound green cabbage shredded
- 1 carrot shredded
- 1/2 cup onion sliced
- 1 teaspoon salt
- 6 slices bacon fried and chopped
- 1/2 cup buttermilk
- 2 tablespoon olive oil
- 2 tablespoon apple cider vinegar
- 2 teaspoon caraway seeds
- 1 teaspoon dijon mustard
- 2 teaspoon honey
- salt and pepper to taste
Instructions
- Add the cabbage, carrot, and onion to a large colander. Sprinkle with salt and toss well between your fingers. Place over a bowl and let it sit and marinate for about an hour.
- Rinse the cabbage mixture under cold running water. Allow to drain for 15 minutes.
- If you’re not making the salad right away you can put it in a ziploc bag and refrigerate it until you’re ready to make the salad, up to one day ahead.
- In a large bowl, add the buttermilk, olive oil, vinegar, caraway seeds, mustard and honey. Whisk until well blended.
- Add the cabbage mixture and the bacon to the bowl and toss well until the cabbage is fully coated in the vinaigrette.
- Season with salt and pepper to taste.
