  • Pasta – I like to use penne pasta or rotini pasta for this recipe, but any bite-size pasta is a good choice.
  • Olive Oil – I always use extra virgin olive oil for the added flavor, but vegetable oil will also work. 
  • Onion – Brown onion adds the most flavor. Yet, any type of onion you have on hand will do the trick!
  • Garlic – Use freshly minced garlic to achieve the most delicious pungent flavor.
  • Red Pepper Flakes – This optional ingredient adds a lovely touch of heat. 
  • Heavy Cream – Gives the dish a rich and creamy texture. Milk will not produce the same consistency. 
  • Parmesan Cheese – Makes the pasta cheesy and gives it a delicious savory flavor.
  • Seasonings – Salt and black pepper season the overall dish.

How To Make Creamy Italian Sausage Pasta

Cook The Pasta

To begin, bring a large pot of salted water to a boil and cook the pasta according to the directions on the package until al dente. Next, reserve about 1 cup of the pasta water and then drain the pasta in a colander. Now, set the pasta aside. 

Cook The Sausage

As the pasta is cooking, heat the olive oil over medium-high heat in a large skillet. Then add the Italian sausage and fully cook it, while breaking it up with a wooden spoon.

Sauté The Aromatics

Next, add the onion garlic, salt, pepper and red pepper flakes and continue cooking over medium heat for about 5 minutes or until it’s soft and translucent.

Make The Sauce

To make the sauce, first you need to make sure you turn the heat down to medium. Then stir in the heavy cream and let it warm up. Next, stir in the Parmesan cheese until fully melted and smooth. 

At this point, if the sauce is too thick, just add some of the reserved pasta water. Then give the sauce a taste and season with more salt and pepper if needed. 

Add The Pasta

Once you’ve made the sauce, add the cooked pasta to the pan and toss it together with the creamy sausage sauce. Then let the dish simmer for another 2 to 3 minutes to warm the noodles up. 

Serve And Enjoy

  • 1 pound Italian sausage (mild or hot)
  • 1 pound pasta (such as penne or rotini)

  • 3 cloves garlic (minced)

  • 1 cup Parmesan cheese (grated)
  • salt and pepper (to taste)

Instructions 

  • Cook the pasta according to package instructions until al dente. Reserve about 1 cup of the pasta water before draining. Set the pasta aside.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until it is browned and cooked through.
  • Next, add the diced onion, garlic, salt, pepper and red pepper flakes to the skillet. Cook until the onion is softened and translucent, about 5 minutes.
  • Lower the heat to medium and stir in the heavy cream. Allow the cream to heat up and then stir in the Parmesan cheese. Continue stirring until the cheese has melted into the cream, creating a smooth sauce.
  • Add the cooked pasta to the skillet and toss until the pasta is fully coated in the sauce. Add in some reserved pasta water if the sauce is too thick. Cook for an additional 2-3 minutes, until everything is heated through.
  • Serve the pasta hot, garnished with the chopped fresh basil or parsley.

Made it with a few tweaks for our palates-
Added both sweet and spicy sausage, sautéed Serrano and habanero peppers with the onions and garlic and I also added sautéed mushrooms
Very nice and quick meal.

Very good. But 1 lb of pasta (I used small rigatoni, maybe that was the problem) was way too much. Next time I’ll cut it down to 3/4 lb. Easy to make and will save this one. Thanks.

Made this for football watching….gone!
I used milk (not heavy cream ) and low fat cream cheese (Neufchâtel) to cut fat….sausage good enough even drained. I usually add the cream cheese as needed, when it gets thick enough, eyeball. Usually about ⅓ cup.

And used sweet Italian sausage.

5 stars. Easy and doubling no problem.
