These dirty fries will rock your world! They’re loaded with homemade gravy, bacon, banana peppers, green onions, tomatoes, parsley and drizzled with mayonnaise. They’re dirty alright, but your belly will thank you!

a basket of fries topped with tomatoes, parsley, mayo, and bacon

We had dirty fries at a restaurant called Archibald Microbrasserie in Quebec city the last time I was there and fell in love with them immediately. What makes these dirty fries special, you ask? Well to me, it’s the banana peppers and the bacon. I would have never thought to put banana peppers on fries before, but trust me when I say that it works. It just works!

I just knew that when I was going to get home, I was going to have to make my own version of dirty fries, so here you have it my friends! We’re talking fries loaded with gravy, bacon, banana peppers, green onions, tomatoes, parsley and drizzled with mayo. That’s right, mayonnaise! I mean talk about amazing flavors.

Ingredients

Detailed measurements and instructions can be found on the printable recipe card at the bottom of the page.

Fries

  • Fries – I used a bag of McCain shoe string fries, store bought works jut fine for this recipe!
  • Bacon – Chopped up and fried till crispy.
  • Veggies – Chopped tomatoes, pickled banana peppers, and green onions chopped up.
  • Parsley – Fresh chopped up fine to be sprinkled over top.
  • Mayo – To be artfully drizzled over top of our completed dish.

Gravy

  • Butter – Unsalted as we want to control the sodium content of our dish.
  • Flour – All purpose flour is all we need to thicken the gravy. To make this gravy gluten free sub in 1 tsp of corn starch in place of the flour.
  • Broth – We want low sodium beef broth to create a rich, dark, perfectly salted gravy.
  • Seasoning – Salt and pepper.

How To Make Dirty Fries

  1. Preheat the oven: To 450 F degrees.
  2. Bake the fries: Place the potato fries in a single layer on a baking sheet, no need to grease the baking sheet. Bake the fries for 15 to 18 minutes or until golden and crispy.
  3. Make the gravy: In the meantime, prepare the gravy. In a small saucepan, melt the butter over medium-high heat. Add the flour and whisk until it becomes paste and it slightly turns brown. Add the beef broth a little bit at a time, whisking constantly until all the broth has been added. Continue to cook for another minute or so until the gravy thickens. Season with salt and pepper.
  4. Assemble the fries: To assemble the fries, place the fries in a plate, drizzle generously with gravy, top with bacon, banana peppers, green onions, tomatoes and parsley, then finish off with a drizzle of mayonnaise.

Want To Make Your Own Home Fries?

I usually say here on the blog that home made is always best but I still appreciate a recipe that is both delicious and quick! If you love some home fries and want to make your own, follow the instructions on this post for my loaded pub fries, you’ll be thanking me later.

What Can I Serve These Dirty Fries With?

By all means feel free to tuck into this dish as if it’s a meal entirely on it’s own, I mean it’s rich and filling enough to be! But if you’d prefer to throw together a big old spread with this as a star member, here’s some great accompaniments to do just that.

  • Parmesan Chicken Strips
  • Skillet Pizza Dip
  • Air Fryer Chicken Wings
  • Cheesy Chicken Meatball Rolls
  • Mini Corn Dogs
  • Firecracker Shrimp
  • Potato Croquettes
  • Chili Garlic Shrimp
  • Baked Chicken Thighs

Mayo Too Thick To Drizzle?

To thin out the mayonnaise so that you can drizzle it easier, whisk it with a couple tbsp of milk. You can also use the mayonnaise as a dip.

Leftovers

Fridge

You can prepare this dish and store it in the fridge for 3 – 4 days, just save the sauce and gravy for drizzling till you’re ready to eat! Be sure to store it in an air tight container till you’re ready to munch!

Freezer

Cooked potatoes freeze excellently! Just store in a shallow air tight container and it should keep for 3 – 4 months. Just pop it out of the freezer and warm in the oven when ready to eat. Save the sauce and gravy for drizzling till you’re ready to eat and enjoy!

These dirty fries will rock your world! They're loaded with homemade gravy, bacon, banana peppers, green onions, tomatoes, parsley and drizzled with mayonnaise. They're dirty alright, but your belly will thank you!

  • 1 pound potato fries I used McCain, about 1 1/2
  • 6 slices bacon chopped and fried
  • 1/2 cup banana peppers
  • 3 green onions chopped
  • 1 medium tomato chopped
  • 1 tablespoon fresh parsley chopped
  • 1/4 cup mayonnaise

For Gravy

  • 1 tablespoon butter unsalted
  • 1 tablespoon all-purpose flour
  • 1/2 cup beef broth low sodium
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
US Customary – Metric

Instructions

  • Preheat the oven to 450 F degrees.
  • Place the potato fries in a single layer on a baking sheet, no need to grease the baking sheet. Bake the fries for 15 to 18 minutes or until golden and crispy.
  • In the meantime, prepare the gravy. In a small saucepan, melt the butter over medium-high heat. Add the flour and whisk until it becomes paste and it slightly turns brown. Recipe Notes

  1. To thin out the mayonnaise so that you can drizzle it easier, whisk it with a couple tbsp of milk. You can also use the mayonnaise as a dip.
  2. This recipe would be great on yam/sweet potato fries as well.
  3. You can use 1 tsp of corn starch instead of flour to make the gravy gluten free
