Pork and Balsamic Onion Quesadilla – start the new year with a healthy recipe, only 276 calories for this delicious quesadilla.

Let’s start the new year with a great healthy recipe. I made this with leftover roast pork I had from New Year’s Eve, but you could use chicken, turkey, whatever leftover meat you have or you could even use deli meat.

The great thing about this recipe is how you could switch ingredients around, use whole wheat tortillas, or Gouda cheese instead. As I was eating this quesadilla I realized that it would taste great with a fresh squeeze of lime juice. I was right. You have to try it, it’s amazing.

So since it’s a new year and all, it’s time for some new year resolutions. I’m not really one for new year resolutions, but we can all use some. So here are some that I can think of right now:

  • eat healthier food
  • exercise more
  • spend more time with family
  • organize my time better
  • drink more water

Those are my top 5 resolutions for this year. If I can stick to half of those I’ll be very happy. So seeing that my first resolution is to eat healthier food, this recipe is perfect, only 276 calories and it was perfect for lunch.

Pork and Balsamic Onion Quesadilla

Ingredients

  • 4 ounce roast pork sliced thinly
  • 2 ounce mozzarella cheese shredded, or sliced
  • 1/2 red onion julienned
  • 1 tablespoon balsamic vinegar
  • 2 6 ” tortillas

Instructions

  • Add the onion to a small bowl and pour vinegar over it and toss. Let it marinate for 5 minutes or so, then drain vinegar.
  • In a large nonstick skillet, place a tortilla over medium heat. Working on one half of the tortilla, start and sprinkle half of the cheese, then half of the pork, and top with the onions. Fold the tortilla in half, flatten gently with a spatula and cook until cheese starts to melt. Flip over and cook until the second side is golden. Repeat with remaining tortilla.
  • Serve warm with a drizzle of lime juice if prefered.

    when you say roast pork did you buy yours somewhere or did you roast it? do you have a recipe for it?
