Skinnified Pork and Bean Tacos – a healthier version of tacos sans cheese. Perfect quick and easy dinner for a busy weeknight.
I’ve just gotten back from vacation this week and I’ve been very busy catching up with everything. So on such busy week nights you don’t have a lot of time for dinner, but I also don’t want to eat out. I’d rather make my own fresh food.
My husband happened to be in the mood for Mexican food, and this was great because with Mexican food you can pretty much just use staple ingredients you usually have around. One such ingredient that I always have is ground pork, there is always at least a package of ground pork or ground beef in my freezer. And you can make a lot of different dishes with ground meat.
I also had some tortillas which I had to use so tacos it is. Now I call these skinnified tacos because there’s no cheese in them, so that’s where a lot of the calories usually come from, but feel free to add cheese. They are quite delicious even without the cheese, I didn’t even feel I was missing it. You could probably make these even healthier if you used whole wheat tortillas.

Pork and Bean Tacos
- 1/2 cup kidney beans
- 1 cup lettuce shredded
- 1/2 cup tomatoes chopped
- 1/2 cup salsa
- 1/4 cup sour cream light
- In a skillet add the ground meat and cook over medium heat, break down the meat as needed. Do not add any additional oil. Once the meat is browned add the minced garlic, hot sauce and taco seasoning. Mix well and remove from heat.
- Assemble the tacos. In each tortilla add a little bit of meat, beans, lettuce, tomatoes, salsa and sour cream.
