Brandy-glazed carrots – scrumptious baby carrots in a delicious light brandy sauce, perfect side dish to your holiday dinner.
Now here’s a shocker. This is the first time EVER that I actually ate any kind of glazed carrots. Seriously! They’re easy enough to make, but I just never made them before. Trying to get away from my traditional sides to go with a roast turkey I decided to make glazed carrots with baby carrots, cause they’re cuter. However I wanted to throw in some alcohol because alcohol always makes a glaze better. So when I looked into my liquor cabinet, there it was staring at me, a bottle of brandy. I opened it and took a sip. OMG! How do people drink this stuff. As it went down my throat I felt it burning a path. Just perfect for this glaze.
What I love most about these carrots is how elegant they look, colorful, shiny and scrumptious. Although these are the perfect side dish for your Thanksgiving dinner, I would literally make these any time of the year.
The glaze is made with butter, honey and brandy. Did I tell you before how much I love butter? Life is so much better with butter. And when you add honey to the butter, well hello. You’ve got magic, but then just cause you’re crazy that way, you throw in some brandy, well you’ve got a party going on.
But before I leave you with my wonderful recipe for these cute glazed baby carrots, I have to tell you about my latest and most favorite thing I bought for myself. My beloved cast iron skillet. You can see it in the pictures. So being the food blogger that I am, you might wonder why I’ve never had one until now. Good question, but I’ll be honest with you. I’ve been scared of them. They’re heavy and they’re made of iron. And I had no clue how to use one. But thankfully, my old friend google told me how to season the skillet, and so I did. It wasn’t hard, and the end result was beautiful. Now I can’t think of using any other skillet besides this one. Oh the things I plan to make in it. You just wait and see.
So two firsts for me with this post, my first ever glazed carrots and my first ever cast iron skillet. Oh how I love what I do!

Brandy-glazed carrots - scrumptious baby carrots in a delicious light brandy sauce, perfect side dish to your holiday dinner.
- 2 lbs baby carrots
- 1/2 cup butter unsalted
- 1/4 cup honey
- 1/4 cup brandy
- salt and pepper to taste
- fresh parsley chopped for garnish
In a large skillet, bring 1/2 inch of water to a boil. Add carrots, cover and cook until carrots are crisp-tender. Drain and set aside.
In the same skillet, cook butter and honey over medium heat until butter is melted. Stir in the brandy and bring to a boil. Cook until the liquid is reduced to about 1/2 cup.
Add the carrots, parsley and season with salt and pepper. Heath through and serve.
