Avocado Chicken Salad

This Avocado Chicken Salad is loaded with so much flavor and made with healthy ingredients! It's delicious, satisfying and perfect for a light lunch, brunch or dinner!

Ingredients

  • 2 avocados mashed
  • 1 tablespoon lime juice freshly squeezed
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon pepper or to taste
  • 2 cups cooked chicken shredded or cut small, from a rotisserie chicken
  • 1 roasted red pepper
  • ¾ cup cheddar cheese shredded
  • 1 stalk celery chopped
  • 2 green onions chopped
  • ½ green bell pepper chopped
  • ½ cup pecans chopped
  • ½ cup parsley chopped
  • ¼ cup red onion chopped small
  • ¾ cup Greek yogurt

Instructions

  • In a large bowl roughly mash the avocados, then add the lime juice and season with salt and pepper.
  • To the same bowl add the rest of the ingredients and toss well.

Notes

  1. Chicken: Use rotisserie chicken to save time. You could also cook your own chicken breast.
  2. Leftovers: Transfer the salad to an airtight container, and place plastic wrap directly over the surface of the salad to prevent the avocados from turning brown. Refrigerate for up to a couple days.
