- 2 avocados mashed
- 1 tablespoon lime juice freshly squeezed
- ¼ teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
- 2 cups cooked chicken shredded or cut small, from a rotisserie chicken
- 1 roasted red pepper
- ¾ cup cheddar cheese shredded
- 1 stalk celery chopped
- 2 green onions chopped
- ½ green bell pepper chopped
- ½ cup pecans chopped
- ½ cup parsley chopped
- ¼ cup red onion chopped small
- ¾ cup Greek yogurt
In a large bowl roughly mash the avocados, then add the lime juice and season with salt and pepper.
To the same bowl add the rest of the ingredients and toss well.
- Chicken: Use rotisserie chicken to save time. You could also cook your own chicken breast.
- Leftovers: Transfer the salad to an airtight container, and place plastic wrap directly over the surface of the salad to prevent the avocados from turning brown. Refrigerate for up to a couple days.
