Avocado Chicken Salad

  • 2 avocados mashed
  • 1 tbsp lime juice freshly squeezed
  • 1/4 tsp salt or to taste
  • 1/4 tsp pepper or to taste
  • 2 cups cooked chicken shredded or cut small, from a rotisserie chicken
  • 1 roasted red pepper
  • 3/4 cup cheddar cheese shredded
  • 1 stalk celery chopped
  • 2 green onions chopped
  • 1/2 green bell pepper chopped
  • 1/2 cup pecans chopped
  • 1/2 cup parsley chopped
  • 1/4 cup red onion chopped small
  • 3/4 cup Greek yogurt


  • In a large bowl roughly mash the avocados, then add the lime juice and season with salt and pepper.
  • To the same bowl add the rest of the ingredients and toss well.


Chicken: Use rotisserie chicken to save time. You could also cook your own chicken breast.
Leftovers: Transfer the salad to an airtight container, and place plastic wrap directly over the surface of the salad to prevent the avocados from turning brown. Refrigerate for up to a couple days.
