- 3 medium yams purple or any color, or sweet potatoes, about a lb
- 2 tablespoon olive oil
- 3 tablespoon Parmesan cheese grated
- salt and pepper to taste
For Avocado Aioli
- 1 avocado
- ½ cup Greek yogurt
- ¼ cup basil chopped
- 3 cloves garlic
- juice from 1 lime
- salt and pepper to taste
- 2 tablespoon olive oil
Preheat the oven to 425°F.
Cut the purple yams into long thin strips then place them in a large bowl, drizzle with olive oil, add Parmesan cheese, salt, pepper and toss well.
Spread out the purple yams over a baking sheet. Try to have a single layer of fries so that each fry bakes evenly.
Place in the oven and roast for about 25 to 30 minutes, turning them over after 15 minutes, until they're crispy and start to brown.
While the purple yams are baking, you can prepare the avocado aioli. Place all the avocado aioli in a food processor or blender and blend until smooth.
Serve purple yams with avocado aioli.
