- 2 chicken breasts I used the breast from a roasted chicken, cooked and shredded
- 1 avocado mashed
- ¼ cup cilantro chopped
- ½ small red onion chopped
- 1 tablespoon lime juice
- salt and pepper to taste
- 4 croissants cut in half, or 8 slices of bread
In a large bowl mix chicken, avocado, cilantro, red onion, lime juice together. Season with salt and pepper.
Cut each croissant in half and divide the mixture equally over the 4 croissants.
