- 4 eggs
- ½ tablespoon dry oregano
- ¼ teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
- 1 tablespoon butter
- 2 ciabatta buns cut in half
- 1 cup kale or lettuce
- 2 ounce goat cheese crumbled
- 4 slices bacon fried
- 1 tomato sliced
Whisk the eggs with the oregano, salt and pepper.
Heat the butter in a pan or skillet. Pour the egg mixture into the pan and til so that the egg mixture covers the entire base of the pan. Cook for 1 or 2 minutes or until golden underneath and flip over. Cook for another 20 to 30 seconds and remove from pan.
To assemble the sandwiches lay a few of the lettuce or kale leaves on the bottom. Top with half the omelette, ½ of the crumbled goat cheese, 2 slices bacon, a couple tomato slices and top bun. Repeat with other ciabatta bun.
