Kung Pao Turkey

Ingredients

Main ingredients:

  • 1 1/2 lb 600 g turkey breast, cut in small cubes
  • 1/2 cup pistachios
  • 5 cloves of garlic minced
  • 1 large yellow bell pepper chopped
  • 1 English cucumber deseeded and chopped
  • 5 green onions chopped
  • 3 tbsp olive oil
  • salt and pepper to taste

Turkey marinade

  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp red wine vinegar
  • 3 cloves garlic minced
  • 1 tbsp sesame oil
  • salt and pepper to taste

Sauce

Instructions

  • Mix all the ingredients for the marinade together and add the chopped turkey to it, and let it marinade for about 20 minutes.
  • In the meantime, mix all the sauce ingredients together and set aside.
  • Get all the veggies chopped and set aside.
  • Heat a wok and add the 3 tbsp of olive oil to it. Add the garlic and cook for 30 seconds, being careful not to burn the garlic. Add the marinated turkey to the wok and cook for about 10 minutes, until the turkey is cooked through.
  • Add the vegetables, minus the green onions to the wok and cook for 3 minutes, then add the sauce and continue cooking until the sauce thickens and everything is coated.
  • Add the green onions and pistachios, mix well and remove from heat.
