Ingredients

  • 1 pound brussels sprouts trimmed and halved
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce low sodium
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar packed
  • ¼ teaspoon ground ginger
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions

  • Prep the Brussels sprouts. In a medium bowl, toss together the brussels sprouts with the olive oil and 2 tablespoons of water.
  • Air fry the Brussels sprouts. Transfer the brussels sprouts to the air fryer basket and air fry at 350°F for 20-22 minutes or until fork tender and browned. Half way through the cook time, shake the air fryer basket to toss the sprouts around.
  • Make the vinaigrette. In a small saucepan, combine the soy sauce, balsamic vinegar, brown sugar, ginger and pepper. Cook over medium-low heat for about 5 to 10 minutes or until the sauce reduces by half and thickens.
  • Toss sprouts with vinaigrette and serve. Pour the dressing over the cooked brussels sprouts and toss well. Garnish with parsley and serve.

Notes

  1. The cooking time can vary based on the size of the brussels sprouts. If your sprouts are smaller they will take less time than the 20 minutes suggested in the recipe.
  2. Don’t overcrowd the brussels sprouts in the air fryer basket as they will not get crispy. If they don’t all fit, you will have to do this in a couple batches.
  3. Don’t forget to shake the basket half way through the cooking process to ensure the sprouts get crispy and browned all around.
  4. Store these air fryer brussels sprouts in an airtight container for up to 3 days in the fridge. The brussels sprouts don’t freeze well once cooked so if you’d like to store them in the freezer, freeze them raw and follow this recipe once the veggies have thawed. They will keep in the freezer for up to 3 months.
