Ingredients

  • 1 pound chicken breasts boneless and skinless, cut into 1-inch pieces
  • 1 red onion cut into 1 inch pieces
  • 1 red bell pepper cut into 1 inch pieces
  • 1 yellow bell pepper cut into 1 inch pieces
  • 1 medium zucchini cut into 1-inch slices

Marinade

  • ¼ cup olive oil
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground

Instructions

  • If using wooden skewers, soak them in water for at least 30 minutes before using.
  • In a large bowl, whisk together the olive oil, garlic, parsley, dill, lemon juice, honey, salt and pepper.
  • Add the chicken pieces to the bowl and toss well to coat with the marinade. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes up to 2 hours.
  • Preheat your grill to medium-high heat.
  • Thread the chicken, onion, bell peppers, and zucchini onto the skewers, alternating with ingredients as you go.
  • Place the skewers on the hot grill and cook for 5 to 7 minutes on each side or until the chicken is cooked through.
  • Serve immediately garnished with additional parsley if desired.

  1. Soak Those Skewers: Don't forget to soak wooden skewers in water for at least 30 minutes before grilling. This prevents them from burning.
