Avocado Chicken Croissants

 Avocado Chicken Croissants - a refreshing avocado chicken salad with lime, red onions and cilantro over delicious buttery and flaky croissants.

Ingredients

  • 2 chicken breasts I used the breast from a roasted chicken, cooked and shredded
  • 1 avocado mashed
  • 1/4 cup cilantro chopped
  • 1/2 small red onion chopped
  • 1 tablespoon lime juice
  • salt and pepper to taste
  • 4 croissants cut in half, or 8 slices of bread

Instructions

  • In a large bowl mix chicken, avocado, cilantro, red onion, lime juice together. Season with salt and pepper.
  • Cut each croissant in half and divide the mixture equally over the 4 croissants.
