Preheat oven to 450 F degrees. Place parchment paper over a pizza stone or tray.
Add the cauliflower to a pot with a couple cups of boiling water and cover with a lid. Cook the cauliflower for about 10 to 15 minutes until soft. Drain and place in a food processor or blender. Add the rest of the ingredients to the blender and blend until you get a tick batter. Pour the cauliflower over the parchment paper and using a spatula spread it into a circle that's about 1/2 inch or less in thickness. Bake crust for about 15-20 minutes or until cooked through.
In the meantime get the onion and chicken ready. In a skillet melt the butter and add the onion and saute until onion is caramelized about 5 to 10 minutes. Season with a bit of salt and set aside.
In the same skillet heat the olive oil. Add chicken pieces to chicken and cook until no longer pink. Add buffalo wing sauce and stir making sure all the chicken is coated in the sauce. Season with additional salt and pepper if needed.
Preheat oven to 500 F degrees after cauliflower crust is done.
To assemble the pizza sprinkle a cup of the mozzarella cheese over the crust, then top with caramelized onions and then the chicken. Top with blue cheese evenly over the pizza and sprinkle the rest of the mozzarella cheese. Bake for about 10 to 15 minutes or until the cheese has melted.
