Bourbon Dijon Tenderloin

Ingredients

Bourbon Dijon Tenderloin

  • 1/3 cup bourbon
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon Emeril's Essence
  • 1 1/2 pound tenderloin piece cut into 1 inch slices
  • 1 tablespoon olive oil

Salad

  • 1 butter lettuce
  • 4 cocktail tomatoes sliced in quarters
  • 1/2 cup bocconcini sliced
  • 5 green onions chopped
  • 2 tablespoon olive oil
  • 1 tablespoon vinegar
  • salt and pepper to taste

Instructions

  • Mix all the marinade ingredients together, so the bourbon, dijon mustard, honey and the essence. Whisk well then add the pork slices to the marinade and toss so that each piece of pork has some of the marinade on it. Cover with plastic wrap and refrigerate for at least 2 hours.
  • To make the salad, chop up the lettuce, and add to a bowl. Add the sliced tomatoes, green onions and bocconcini. Do not add the olive oil and vinegar just yet.
  • In a skillet heat up 1 tbsp of olive oil over medium heat. Add the meat to the skillet, searing each side until the meat is browned, then turn over and sear on the other side.
  • Add the olive oil, vinegar, salt and pepper to the salad and toss.
