Ingredients

  • 4 eggs
  • 8 slices bacon
  • 4 tablespoon goat cheese
  • 3/4 cup shiitake mushrooms sliced
  • 1 teaspoon butter
  • 8 slices salami
  • salt and pepper to taste

Instructions

  • Preheat oven to 350 F degrees.
  • In a small skillet saute the mushrooms in the butter for 2 minutes and season with salt and pepper.
  • Add 2 slices of salami to the bottom of each ramekin.
  • Arrange 2 slices of bacon around the inside of each ramekin.
  • Divide the mushroom evenly among the ramekins and add a tbsp of goat cheese in each.
  • Last but not least, crack an egg in each dish and season with salt and pepper.
  • Bake for 25 to 30 minutes, or until eggs are done to your liking.
