- 4 eggs
- 8 slices bacon
- 4 tbsp goat cheese
- 3/4 cup shiitake mushrooms sliced
- 1 tsp butter
- 8 slices salami
- salt and pepper to taste
Preheat oven to 350 F degrees.
In a small skillet saute the mushrooms in the butter for 2 minutes and season with salt and pepper.
Add 2 slices of salami to the bottom of each ramekin.
Arrange 2 slices of bacon around the inside of each ramekin.
Divide the mushroom evenly among the ramekins and add a tbsp of goat cheese in each.
Last but not least, crack an egg in each dish and season with salt and pepper.
Bake for 25 to 30 minutes, or until eggs are done to your liking.
